Cookies for Breakfast?
Okay, sometimes I go a little crazy around here and actually serve my children cookies for breakfast. Do you remember the old Bill Cosby routine in which Olivia talks him into serving her chocolate cake for breakfast? It is available right here yet incomplete. I recall this story beginning with dad's "brilliant" idea here! Well, my breakfast cookies are at least a little healthier than that!--but just fun enough that the children really like it when I do this! So, here is one of my recipes--which I save up for when I have several spotted bananas I need to use up!:
Michelle's Banana Oatmeal Breakfast Cookies:
1 1/2 cups flour (unbleached preferred)
1 tsp. salt
1/2 baking soda
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1/2 cup (1 stick) softened butter
1 cup brown sugar, packed
3 large eggs
5 ripe bananas, mashed
1 tsp. vanilla
3 cups raw quick-cooking oats
optional 1/3-1 cup each dried fruit of your choice, miniature chocolate chips, chopped walnuts
- Combine flour, salt, soda and spices well and set aside.
- Beat butter, brown sugar, and egg in a large bowl.
- Mash bananas with a potato masher and add it and the vanilla to the wet ingredients.
- Gradually add in flour mixture and then oats until well combined. Depending on the size of your bananas, you may need to add just a few extra oats--or use a little less.
- Grease a large cookie sheet on the bottom and sides. Spread cookie batter evenly.
- Add the optional extra ingredients. Yesterday morning I sprinkled craisins on 1/3 of this, then added 1/2 cup mini semisweet chocolate chips over the entire sheet and then some chopped walnuts over 1/2 the sheet. I then pressed the ingredients lightly into the cookie dough. If I had children who all liked the same ingredients, you can add these to the cookie dough as you are adding the dry ingredients. Yet since I have a couple of pickier ones I keep all my children happy this way!

- Bake at 375 degrees until golden brown on top (check in about 20 minutes).
- I served these with hard-boiled eggs and milk and hot tea for breakfast, but these also make a good afternoon snack!
Realize that these "cookies" are really only lightly sweet. The bananas, small amount of brown sugar and fruit/chocolate chip options do add some sweetness, but don't expect these to taste like donuts! Let me know your own family's favorite add-in optional ingredients in the comments.
