Live Blogging...
This seems to be a new things among bloggers to live blog from a conference or convention. Well, my life is not so exciting that I am always going to conferences. (although, I am heading to a women's retreat in July - FUN) So, I decided to LIVE BLOG FROM MY BACKYARD!!! LOL
I have my nephew today and we have a "new to us" swingset that we got earlier this week so I am sitting in my adirondack chair watching the kids play and typing. So, welcome to my backyard! :) The swing came from a long time friend. Her daughter is now a teen and she wanted to give it to a family with little ones and thought of us immediately. She is my French speaking friend. I may have mentioned her a long time ago. She is a French teacher at a local university and her husband is a translator. They speak French in their home but their daughter never learned it. That always cracks me up that they speak to each other in French but to their daughter in English all the time. Anyway, her husband came up and helped us put the swing together. She is out of town visiting her father so he is coming up this evening for dinner with us. He and Dan are avid classic western fans so they will be dragging out the old westerns to enjoy together tonight. JoNathan might join them...
Catching up on some goals...
I made a new recipe this morning from my new Low Salt Cookbook (AHA cookbook - I have a first edition paperback in this one so I got CHEAP - love that). I tweaked it a bit... I tend to do that a lot, huh?
Here is what I did...
The basic recipe: 3 1/2 cups all purpose flour (I mix hard white and soft white to make the AP version) 5 tsp. baking powder (only because this is a double recipe) 1/2 cup sugar (turbinado or honey works well) 3 whole eggs or 4 egg whites 1 cup skim milk
Now, to make blueberry muffins at this point you can add 1/2 cup canola or heart healthy oil 2 cups unsweetened blueberries
To make banana muffins I leave the oil out and just add 3 large very ripe bananas (the moisture is enough that you do not need oil)
You can also add walnuts or pecans if you like nuts - which I do and so do the kids. This recipe makes 12 good sized muffins.
That's it...
Other stuff we accomplished this week include
* Walking every day for at least 30 minutes. * Dan lost three pounds this week - he is swimming every day, lifting weights several times a week and running some. He is doing so good!!! He is eating great, too. I am so proud of him. * We have all been eating much better. The kids are fueling well for all the sports stuff and their performance is getting better with better food. They are not nearly so tired. * We still need to up our water intake. * I have started a notebook for recipes and menu planning to fit our dietary needs. I am also keeping more fruits and veggies stocked in the refrigerator
Gotta scoot... kiddos are needing snacks and water.
