It’s time to get back into a normal routine, don’t you think?  I’m ready for that.   The first step is this menu plan.  I just love how much stress menu planning takes away.  It certainly makes everyday cooking a lot more simple.

Before I share our menu for this week, I wanted to direct you to two great recipes we have recently enjoyed:

The first is a green bean casserole we had for Christmas.  It is not your average green bean casserole!  This recipe is free of canned soup, and includes fresh green beans, mushrooms and shallots.  It's absolutely scrumptious.  This recipe was recommended by Susan of High Desert Home.  I'm so glad she mentioned it, since I  think it will be a staple in our family for a long time to come.

The second is a simple, yet delicious, Easy Thai Supper.  My favorite part of this dish is the coconut tamari rice - Superb!  I will be using this rice to accompany many other recipes.

This week I am excited to have my  year old daughter make most of a dinner with supervision and just a little help.  It should be fun!  She will be cooking on Tuesday night so check out that link.  It’s delicious.

Rachel Ray’s Mozzarella stuffed meatballs - If you click on this link you will notice that the meat balls are part of a whole dinner plan that includes potatoes and brocolini.   SugarBean will be making the meatballs and some regular broccoli and carrot sticks.   She should be able to do most of it alone, except I will take the hot pan out of the oven, and remind her to wash her hands after touching the raw meat

Wednesday

Winter Squash Galette (From my awesome new cookbook - Vegetarian Cooking for Everyone)

Friday
Tortilla Soup

Saturday
Leftovers or Breakfast burritos.

Since I received my new cookbook last week, I am really revved up and want try some new recipes.  The cookbook is Vegetarian Cooking for Everyone by Debroah Madison.  It is absolutely beautiful (and huge too - 742 pages).  The recipes look great.  I am very pleased with the way it is set up and know it will be a go-to book for cooking vegetables any which way.  It will come in very handy when I have some lovely veggies on hand and am wondering what to do with them.  I’ll look them up in this little beauty and find a number of ways to prepare them.  I know I’m gushing, but I always get a little giddy over a good cookbook!

Some recipes I’ll be trying this week from Vegetarian Cooking for Everyone are:

Breakfast
Millet Porridge with currants and almonds
Steel cut oats
Peach Mango Frappe

Lunch
Irish Soda Bread
If there is Broccoli rabe at the store I’ll make Stir fried brown rice and broccoli rabe.
Foccacia bread.

That’s probably enough for one week....although I really want to make the Giant Cheddar Souffle!  Doesn’t that sound cool?

Also in the works for this week...Laura at Heavenly Homemakers in going to be walking us through Sourdough Bread.  I’d like to keep up with that too.

Let me just say that I've had that cookbook for 5 years and it is the most used book in the kitchen. And we're not even vegetarian. Such a great vegetable resource. One of my favorite recipes lately is the Apple and Celery Salad with Gruyere. (page 166)

Really great-looking menu! I was wondering if you could tell me what coconut milk tastes like in Thai food/curries. I have been hesitant to try it!

Stacey - I'm so glad you confirmed that the book is a good one. I really think it is!
I checked out the recipe you mentioned and it sounds great. Perhaps I'll put it on the menu for next week.

Coconut milk does taste like coconut. I buy the whole milk kind and it is very rich and creamy. I think it is great in curries ( and other recipes). It really adds body to the flavor. In the recipe I mention, the rice is cooked in a mixture of coconut milk,tamari and water. The whole family enjoyed it.

I think you should try it at least once :)
