Pumpkin Pie recipe with a twist ~ Delicious

I love pumpkin pie but there aren't any pumpkins ready yet so instead of using pumpkins we use spaghetti squash since there are LOTS of them ready fresh from the garden. This is a yearly tradition. As soon as the squash are ready to start being picked we always have to make a pie and I thought I would share the recipe because it is DELICIOUS!!!
My pie is baking in the oven right now so it will be ready for lunch tomorrow afternoon. Mmmm. : )
Mock Pumpkin Pie
One unbaked pie shell
2 cups of cubed spaghetti squash
2 cups of milk
3 Tbsp flour
1 1/4 cups sugar
2 eggs slightly beaten
Sprinkle of cinnamon
Pour the milk into your blender until it reaches the 2 cup mark. Add chunked spaghetti squash to the milk until the milk level reaches the 4 cup mark on your blender jug. (This is the easiest way to accurately measure the squash) Add the remaining ingredients and blend until smooth. Pour into your unbaked pie shell and Bake @ 350 F for 40 minutes or until set. Let cool completely before cutting.
