Blueberry Zucchini Muffins ~ Recipe

Everyone knows that you only need one zucchini plant to provide you and usually your neighbor with a non stop supply of the delicious veggie for cakes, muffins, and baked or fried treats! This is the case for my mom and we are reaping the benefits with an abundance of delicious zucchini to eat :)
So far we've had chocolate zucchini cake, stir fried zucchini, zucchini sticks with dip, zucchini breaded & fried with dill dipping sauce and now delicious muffins. I don't know what it is but we never seem to tire of it *grin*.
While blog hopping the other night I came across this great recipe for zucchini muffins with blueberries and a delicious hint of lemon :) The kids LOVED them! I must say though it seemed to take me a good 15 minutes longer though to get mine to cook right through the middle. Just to much blueberry juice in there. LOL.
In all the hub bub of the kids watching them cook and come out of the oven I forgot to take a photo of them finished and there wasn't one left either. Oh well, next time :)
I've got another package of zucchini in the freezer that I'm going to pull out for cake tomorrow. We couldn't keep up with the last lot of them and a great way to keep your zucchini for baking at a later date is to grate it up and freeze it in ziploc bags :) Works perfectly!

I can just tell without the "after" picture that they were delish! I am probably the only person on earth whose z-plant did not thrive last year. But I do enjoy getting left-overs from neighbors. I grilled some last week that a friend gave to me. Yum!

I was blessed with zucchini this year from a gracious friend whose plants had thrived, too. What a blessing it was!
I love it sliced and sauteed in butter. Oh, yum!

Sounds good! Zucchini makes things so moist! I have to say that I love your rectangle muffin tin!! They must look like little loaves when they're done!
I also have two questions: how do you put your 'friends' list in a little scroll box? and how do you add the subscribe feature in your sidebar?

What a great flavor combination that I have never dreamed of! I'll have to try that! Thank you for the kind comments on our dresses. But if you were here and saw them in person, you would know what I mean. =) I was hoping to wear them to reenactments around here but I need to fix them before that. And redo my son's coat. I do get these patterns from the Halloween section. For year 4, I bought a lot of patterns for .99 in the ladies section which now feature 50's to 6o's eras. The only historical patterns I have purchased are from Colonial Williamsburg on the fourth of July weekend (you can see those posts). I went to the milliner for tips. I don't know when I'll have time to sew those though! LOL

YUM! thanks for the ideas. I was hoping you would have that chocolate zucc cake recipe up. I'm eager to try it. I have froze my shredded zucc before, however, after it thawed, it was very water. So would i just squeeze the water out and use it? or is there a proper way to freeze it?
What about corn, do you freeze any? I have corn growing and we are wanting to freeze it for winter. Any tips would be super!
