You've probably noticed my ticker at the top of my blog entries by now and found that I am starting a tough battle against the bulge : )
I've been on the heavy side since the birth of K (I put on over 50 lbs) and have decided to put my foot down and tell myself enough is enough! I need to do this for my health since I have asthma which is quite severe at times and lands me in the emergency room a couple of times a year usually and I am worried about diabetes. There isn't a history of it in my family but being obese is a major cause of adult diabetes and I want to cut those chances down now. And of course for my family, so mama has more energy and can keep up with everyone : )
I have been having a chicken or shrimp wrap for lunch instead of bread because I am trying to cut down on the carbs and I noticed that there is an awful lot of sodium in one of those little wraps not to mention fats, and I'm not using the full size ones either. The ones that I have been eating are the smaller 6.5 inch ones. So to cut out the oils, shortening, sodium and numerous other things on the label that I'm not sure what they are even I've started to make my own.
Tortilla Wrap Alternative
1 cup skim milk
1 egg
1 cup of flour (whole wheat flour would be the best)
Mix all the above ingredients together with a wire whisk until smooth.
Use the batter just like you would pancake batter. Ladle one scoop full into your pan and tilt the pan from side to side spreading it out to all edges of your frying pan so that it gets nice and big and thin. Now fry in your frying pan flipping once the underside starts to get golden. I am using a non-stick pan so that I don't need to add any butter at all to keep it from sticking. One ladle full makes one large tortilla and the batter will make four of them. So the rest I'm going to store in the refridgerator for the next couple of days.
Variations
A great way to spice up your batter for more flavour is to add:

a handful of minced fresh chives if you have them or green onion that has been chopped up finely for a nice oniony taste

fresh basil choped up fine is also a nice addition to your batter if you love the sweet flavour of basil.
Then I top it with a chicken breast that I've chopped up or 4 ounces of shrimp, some red onion strips, a little lettuce and just a pinch of fat free mayo to give it a little wetness so it isn't to dry.
Make sure if you are using chicken breast and you are watching your weight that you try to buy the fresh breasts and not the ones that are frozen in the larger quantity boxes. Some of them are okay but have a close look and check to see if they have been seasoned. I made the mistake of picking up some of them and they have some sort of seasoning on them and on the nutritional label they contained over 700 milligrams of sodium. WOWZERS!! I might as well have ate a bag of chips : (
