Oct. 29, 2005 - I Tried a New Muffin Recipe

Ive
seen recipes with the combination of apples and pumpkin, but never
tried any until this morning. The results were really delicious and
this recipe is a keeper for us. They tasted so good with Maple butter.
APPLE PUMPKIN MUFFINS
2- 1/2 cups flour (I used whole wheat)
2 cups sugar (I used only 1-1/4 cups of natural cane sugar)
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. ginger
1/4 tsp. nutmeg
2 eggs
1 cup pumpkin
1/2 cup oil
2 cups finely chopped peeled apples
In
a large bowl, combine the first 7 ingredients. In a small bowl, combine
eggs, pumpkin and oil; stir into dry ingredients just until moistened.
Fold in apples. Fill greased or paper-lined muffin cups two-thirds
full. Bake at 350 degrees for 30-35 minutes or until muffins test done.
Cool for 10 minutes before removing from pan.
Yield: 1 ½ dozen

This is just the type of recipe I was looking for. I'm going to buy pumpkin this weekend and was intending to make pies already but I also wanted to make muffins and had just been wondering about apples and pumpkins together when I read your recipe.

This sounds yummy! We have pumpkins and apples to cook with in the house so we may just try this recipe. My daughter doesn't enjoy pumpkin pie but she said she may venture to try this!
