Chicken Caesar Pasta Salad

A friend of my aunt brought this to us week before last.  It was simply delicious. She had everything in individual containers and we just tossed it all together when we were ready to eat.  I had been craving it, so I made it for us last night.  Scrumptious! Even the left overs were good (the croutons weren't crunchy though).


Chicken Caesar Pasta Salad

2 or 3 boneless skinless chicken breasts

2 heads of Romaine lettuce

1 bag or box of croutons

8 oz grated parmesan cheese

8 oz penne pasta, cooked to al dente

1/2 to 3/4 jar T. Marzetti's Caesar salad dressing (or your favorite brand)

 

Dice the chicken and brown in a skillet.  Cook the pasta according to package directions.  Tear or chop lettuce.  Refrigerate chicken, pasta, and lettuce until ready to serve.  Toss  chicken, lettuce, croutons, parmesan cheese, and cooked pasta a large salad bowl.   Add enough salad dressing to cover all components of the salad.  Make sure everything is coated lightly with salad dressing, but not saturated. 

 

Optional: 
Sprinkle chopped pecans in salad or 3 T.  toasted sesame seeds


I chopped and browned the chicken that afternoon and cooked the pasta at the same time.  During this same time, I washed , dried and tore the lettuce. This was a real time saver,  I just tossed everything in the bowl right before dh came home from work.  I had so much free time, I even made a dessert.  I also made extra pasta and browned extra chicken to make a couple of other meal preparations go much faster, not mega cooking - but every little bit helps.  It should help during the Clean Heart Clean Home Challenge from Dandelion Seeds that I will be participating in.  I am excited to get started on this. I've already printed out my organizer and hole punched it and placed it in a binder and underlined  some things in the first few pages.  This is going to come in so handy since we brought home a few large  pieces of furniture that were my grandmothers and now need to integrate into our home.

I am working on my summer (less cooking menu) and this recipe looks perfect. Even better is that it will travel well since you can keep everything seperate.
