In honor of the request for the recipe here it is, I hope you enjoy. This is a fast and easy 30 min meal. With 5 children, and a lot to do I am all about fast, easy, tasty and nutritious!
First: Parmesan Crisp Chicken,
· 4 boneless, skinless chicken breast halves
· ½ cup mayo
· 1/3 cup grated or shredded Parmesan cheese (I prefer the fresh shredded)
· ½ tsp garlic powder or 1 clove minced garlic (I prefer the minced garlic)
· ½ cup seasoned bread crumbs
Preheat oven to 425. Combine the mayo, Parmesan cheese and garlic in a shallow bowl. (I use a pie dish.) Then spread the mayo mixture all over the chicken, after that coat with bread crumbs. Set on baking sheet and bake for about 20 minutes or until lightly browned and tender.
Second, the easy Risotto style rice; while the chicken is baking up the rice can be prepared.
· 1 cup uncooked long grain white rice
· 1 clove minced garlic
· 2 cans or 3 to 4 cups chicken broth
· Generous dash ground black pepper
Lightly brown rice and garlic in pan for 2 minutes, stirring continuously. Add ½ cup of broth and cook until liquid is absorbed. Add remaining broth, ½ cup at time, until both is absorbed before adding more. Cook until rice is a done and creamy. Then add cheese and pepper. Cooking the rice this way allows the starches to develop into that creamy texture that make this Risotto “style” rice.
Third, the sautéed zucchini: Use about 3 zucchinis (I use 2 green and 1 yellow for color) Slice them in half length wise, then slice thickly in the other direction so that you have half circles. Spray pan with non-stick, then add about 2 cloves minced garlic, 2 generous splashes of Italian dressing and some Parmesan cheese. Toss in zucchini and sprinkle with black pepper and oregano. Sautee until the zucchini is “sweating” and lightly browed.
Using similar ingredients in all three dishes brings a flow of taste through the whole meal. I hope all will enjoy this meal. Come back and let me know how it was.
