What I have been up to part 1...

Wow!! It has been a long time since I last blogged! I’ve just been taking a much needed mental break. I have been keeping busy though. LOL! I thought updating with some pictures might be fun. Over the next few days or so I will be adding pictures and posts about what we have been up to, and will be up to. They will include things like, repurposing furniture, jewelry making, and gardening to name a few.
We recently took a day trip to the Grand Coulee Dam. That was a sight to behold! The Grand Coulee Dam is not nearly as tall as the Hoover Dam; however it is the heaviest concrete structure in all of the United States. It has approximately 12 million cubic tons of concrete!! It is the 3rd largest producer of electricity in the world! The dam itself is about 1 mile across. Your eyes can barely distinguish the mass of this dam. It is incredible that this structure was built in the 30’s. Besides the awesomeness of the Grand Coulee, just past the spill-way we saw 2 bald eagles perched up on an old telephone poll. They were beautiful!! We also spotted their nest on the other side of the dam. Now that was a nest! During our picnic on the lawn in front of the spill-way they turned the spill-way off to just a tiny trickle. We were very disappointed until we learned that they have actually only turned it on full power during the day, 4 times since 1990!! YAY! Praise you Lord. What a blessing!! During a brief thunderstorm while we were there, we stopped in the newly remodeled visitor center. I didn’t take any pictures of that, however I will next time. We had the opportunity to chat with a local Native American from the Colville Confederated Tribes. His particular family was Nez Perce and Palouse. This gentle man was a speaker and an artist. He shared really great info with us about his family’s means of communication and identification. There is no written language for his people, so everything was/is spoken. There is a very nice museum that we will visit the next time we go all about the Confederated Tribes. The tots were tired so we decided to head home and skip the museum. However, we snapped a picture of a Teepee that various Confederated Tribes might have used. Hopefully we can go back soon and absorb even more of the culture, and beautiful natural surroundings.

Our 10th anniversary!!....

10th Anniversary!!
As of Saturday May 6th, 2006, my dear sweet husband and I have been married 10 years!! Over the last ten years, we have experienced many ups and downs, as we have learned to bend to God’s will for our lives, and to live together as one. Over the years we have had many friends and family members get married, then divorce. The common struggle we have noticed in all these people is that they were two acting as two. The Lord commands that the “two will become one.” Genesis 2:24. For this reason a man will leave his father and mother and be united to his wife, and they will become one flesh. My husband and I never really had an example of two becoming one, like many in our society; it was “all about me!” Since marriage was God’s original idea, not man’s, we are held to God’s plans for the covenant of marriage. Whether individuals are believers or not, the marriage covenant still has spiritual ties. We find evidence of this in Matthew 19:4-6 from the words of Jesus himself… "Haven't you read," he replied, "that at the beginning the Creator 'made them male and female, and said, 'For this reason a man will leave his father and mother and be united to his wife, and the two will become one flesh'? So they are no longer two, but one. Therefore what God has joined together, let man not separate." Those ties go far beyond, sharing a home, children, vehicles, and a bank account; these are our very souls being bound up in heaven. Without much of any proper example for marriage, (except how not to be) my husband and I struggled to find our way. It was through God alone. We did have a very wonderful couple constantly lift us up in prayer, read to us, and gift us a trip to a lovely marriage retreat. Praise the Lord, He brought along a couple to mentor us through our time of strife, and extreme pain. The wounds of the beginning of our marriage are healed through the Lord’s grace, and we have been continually building on the foundation that God laid before us. Learning to live as one effects every aspect of our everyday lives, from how we homeschool, to the decisions my husband makes regarding work. One great example of marriage we did take away from our parents was one of division, and we wanted no part of it! It nearly destroyed us as individuals growing up. Once we were told by my FIL that he noticed we were “very intentional about the way we live our lives and raise our children”…you know I never thought much about it, but yes I suppose we are. It seems to be in our very nature to see the whole picture, and work towards those goals, which God has called us. We learned very early on that a house divided will fall. Luke 11:17 "Any kingdom divided against itself will be ruined, and a house divided against itself will fall. It is our desire to raise up our family, as a house united, down to the very decisions we make regarding everyday life, even homeschooling. The reason I mention homeschooling is that seems to be a big point of contention among homeschooling (or potentially homeschooling) families I have met recently. Usually one parent does not agree or is apathetic, even if they allow it. That right there is an example of division. There is contention, which leads to avoidance of the serious issues that may and will come up regarding homeschooling/training up children. There will always be issues that require attention. In Isaiah 43:2 it states WHEN, not IF; when you pass through the waters, I will be with you; and when you pass through the rivers, they will not sweep over you, when you walk through the fire, you will not be burned; the flames will not set you ablaze. We can not survive the trials life throws at us without God, and as married couples, each other. I continually praise our Father, who rescued my husband and I from a family cycle of selfishness, neglect, and or abuse, whether physically or mentally. He has allowed us to overcome those things which could have spilled over into our own family. I look forward to the next 10, 15, 20 or more years the Lord chooses to set before us. I will see it all as a gift.

My very dear friend recently began a journey to quit smoking. I personally have never smoked, however many of my friends and family have. Obviously, I do not personally know the inner struggles that one endures trying to quit but I can empathize, to the best of my ability. I can only imagine how hard it is. I want to support my dear friend in her journey. So, I thought that I might blog about it and send any of my readers over to her site to send words of encouragement her way, especially if you might have quit smoking. A fast easy and tasy, Recipe

In honor of the request for the recipe here it is, I hope you enjoy. This is a fast and easy 30 min meal. With 5 children, and a lot to do I am all about fast, easy, tasty and nutritious!
First: Parmesan Crisp Chicken,
· 4 boneless, skinless chicken breast halves
· ½ cup mayo
· 1/3 cup grated or shredded Parmesan cheese (I prefer the fresh shredded)
· ½ tsp garlic powder or 1 clove minced garlic (I prefer the minced garlic)
· ½ cup seasoned bread crumbs
Preheat oven to 425. Combine the mayo, Parmesan cheese and garlic in a shallow bowl. (I use a pie dish.) Then spread the mayo mixture all over the chicken, after that coat with bread crumbs. Set on baking sheet and bake for about 20 minutes or until lightly browned and tender.
Second, the easy Risotto style rice; while the chicken is baking up the rice can be prepared.
· 1 cup uncooked long grain white rice
· 1 clove minced garlic
· 2 cans or 3 to 4 cups chicken broth
· Generous dash ground black pepper
Lightly brown rice and garlic in pan for 2 minutes, stirring continuously. Add ½ cup of broth and cook until liquid is absorbed. Add remaining broth, ½ cup at time, until both is absorbed before adding more. Cook until rice is a done and creamy. Then add cheese and pepper. Cooking the rice this way allows the starches to develop into that creamy texture that make this Risotto “style” rice.
Third, the sautéed zucchini: Use about 3 zucchinis (I use 2 green and 1 yellow for color) Slice them in half length wise, then slice thickly in the other direction so that you have half circles. Spray pan with non-stick, then add about 2 cloves minced garlic, 2 generous splashes of Italian dressing and some Parmesan cheese. Toss in zucchini and sprinkle with black pepper and oregano. Sautee until the zucchini is “sweating” and lightly browed.
Using similar ingredients in all three dishes brings a flow of taste through the whole meal. I hope all will enjoy this meal. Come back and let me know how it was.

Who are we?...

Hey there, I just wanted to take some time to introduce my family to you. My name is Renee, my sweet husband is Chris, and we are the proud parents of 5 wonderful gifts from the Lord. We are also a military family. My dh has been in the Air Force for 7 years. We have been stationed in MS, CA, AZ, and now WA state. California is our home state, and we do miss it, mostly because of missing family, but also because there was always some great place to go and explore. We could go to the beach one day, be in the mountains the next, and if we wanted the desert the following. It was great. Don’t get me wrong I really like Eastern WA, for the most part; we are just having a hard time adjusting to the {{{cold}}} and the fact that it is the biggest city between Seattle and Minneapolis/St. Paul. Can anyone say BRRR!?!?! I would describe our homeschool style as eclectic, and relaxed. We are currently using Konos and love it, we also use Math-U-See, and Alpha Omega for Language Arts. I myself make up theme units based on holidays, and current events to season our days and mix things up. We have been learning to take life one day at a time, meaning to not let life overwhelm us and get the best of us.
Now, a little bit about each of our children. To start there is Nathan, our 8 year old. He is a born leader. He is quiet and reserved, yet strong in his beliefs; he owns his thoughts and is not easily swayed to things he does not agree with. Some have described him as an “old soul.” Many get the impression that he is older inside than his biological age. Nathan is also very witty as well, his sense of humor is dry but funny. We believe that these are God given traits and mostly his nature, there is inevitably going to be some nurture there, however as we have learned in our parenting journey, it is best to not fight nature, but instead help to develop strengths and weaknesses alike. With all of this, Nathan is a bit of a perfectionist and hates to not excel in all things. We find we have to be mindful of that, and push when necessary and correct at other times. He is also very articulate; he always has been since he could talk. Schooling him has been an adventure to say the least. When he is not interested in something he is very passive aggressive. That has been a hurdle, we are working to overcome. One thing we have found works best is to use a more eclectic approach, and limit the “workbooks.” He is very hands on and visual and workbooks don’t always cut it.

Moving on to Nadine, our second born. She is almost 7. (Got that, not 6, but almost 7) LOL! She is a very precocious child, full of life, and fun. She is also insecure at times, and needs constant reassurance in her accomplishments. There in lies a balancing act we must maintain as to not deprive her of the nurture her love language speaks, but also not to inflate her ego to an unhealthy level. She is competitive, but loathes losing. She is also Ms. Justice as we like to call her. If things are not fair and by the book, then Nadine cries foul!! Nadine so far is our only fully homeschooled child. See Nathan went to public pre-school and Kindergarten, before we answered the Lord’s call on our hearts to homeschool them. Her ability to learn in a more “untraditional” sense is amazing. She reads at a fourth grade level, has a knack for spelling, and math. We truly see a difference between Nathan and Nadine; public school, even just 2 years worth, changed Nathan a bit. It has taken 3 years just to get back his love of learning, and his ability to work for himself instead of needing to be told “step 1, step 2 etc. Nadine on the other hand, just goes full force into her studies, and was never pushed before she was ready. We see the difference, and are convinced. LOL! Nadine is also a natural mother. She can calm a toddler, and burp a baby with the best of them. She moves in that direction without our prompting, she is drawn to it. Homeschooling Nadine has for the most part has been easy. She loves to read, write, spell, and do “busy” work. Learning is fun for her and often seen as a game. Couldn’t we all use one of those students?! Praise the Lord and His mercies!!

Then there is Grace… oh Grace. She is our pistol of a 2 year old. I say that not because she is 2, but because she is that way; has been since before birth. Grace is a fighter by nature. She does not have to be, there are plenty of toys, food affection, attention, and love to go around, but alas she fights {{ everything.}} She is also resistant to change, and thus has made it hard during transition times, like giving up the “binky.” She will not do it! She also is slow to potty train which gives me 3 to change everyday. Sigh. LOL!! Talking has also been an issue…she can talk, she just wishes not to. So, we take away her “binky” during the day to limit her excuses not to communicate. When Grace gets an idea in her head, she digs in deep and is difficult to persuade. We have found these traits to be both beneficial in our own lives as well as detrimental when we get too stubborn, so thankfully as we are all” fearfully and wonderfully made” the Great Lord has equipped us to handle Grace and her “Grace-isms” as we affectionately call them. With all her stubbornness Grace loves to learn, color, draw, and look at books. I believe she will be a good student when* she* is ready. Lastly Grace is very much sibling dependent. She needs her “pack” so to speak, to feel a part of it all.

Now there is Jacob. We call him “cub” because for 15 months old he is large, and so strong like a bear cub. He is also cute and cuddly like a teddy bear. Jacob is “all boy” in almost every sense of the stereotype. Strong, rough and tumble, fearless, whiny, assertive, and adventurous. Thankfully our all knowing Lord, designed him with balance, and gave him a very sweet disposition; he is a nice little guy, not aggressive at all, just joyful. Whereas one might assume after spending day in and day out with Grace that she is not generally happy. She is joyful inside though. Jacob is very smart, however his actions would not always prove such. He definitely uses his head for many situations. No, I mean literally. He uses it to stop when running too fast, to play his toy piano, to stand up after falling etc. LOL!! This kid takes a lickin’ and keeps on tickin’. I am not sure yet how he will be as a student in the future though I suspect he will be the one itching to go outside and explore. Only time will tell.

Last but not least there is our little Sophia. She is such a doll. Only 3 months old but already so joyful; her smile alone is worth getting up a 4 am to feed her and cuddle her. The Lord has once again proven so gracious and merciful to my dh and I, as we were so burnt having just had Jacob and Grace prior to her, and we had just moved twice in less than 2 years. We were stressed, and tired, worn out and scared of round 3 with another newborn. However she came out with a gentleness, which emanated from her, she slept through commotion, and was not colicky. For now she is very engaging with her brothers and sisters and they to her. She is very vocal, and hands on. Her playful personality is a joy to experience. It is too early to tell what kind of child she will become, but one thing is for sure, she as the others, will be loved, guided, nurtured, and developed according to our best knowledge of their design.
