One of the fun things about camping, is camp food. EVERYTHING tastes better outdoors, when you are starving and a zillion miles away from Papa Murphy's take-n-bake pizza. Hot Dogggggggggs roasting on an open firrrrrrrrreeeeeeee~~~~~
But I digress.
Here is a great recipe for you, for what started out to be kinda like Tamale Pie, which is nothing like Tamales, but more like Chili and cornbread. So, you take some heavy duty foil and line a dutch oven, the kind with the little tripod underneath. Then you put about a lb and a half of cooked ground beef, elk or whatever, that has been seasoned with s&p, chili powder, garlic, onion, and then you add some diced canned tomatoes and some corn. You can add other stuff too. Jalapenos, or green chilies, or potatoes or whatever. This is the way I cook, just add whatever I feel like at the time, and I don't measure. Just wing it.
Ok, next, have your cornbread batter all done up----what? You don't know how to make corn bread? Sheesh. Ok, so put about a cup or so of flour in a bowl, add a cup or so of corn meal, and some real corn ---kernals, not corn on the cob. Then add an egg, about a third cup of oil, or bacon grease. REALLY. I kid you not. Then, add some salt and baking powder, however much you think, and then add milk, oh, about a cup till it's pretty batterey and easy to pour, but not TOO thin. About like um, well corn bread batter.
So then you pour that or dollop it over the meat mixture in the pan, put the lid on and then cook it over some nice hot coals, and add some nice hot coals to the lid till it cooks the cornbread. Believe me, it will be really good however it turns out because everyone is cold and starving and they would eat ANYTHING at that point.
Actually, it IS quite good, and even better if you DO use elk for the chili.
