Aug. 7, 2007~ I can see clearly now the rain (smoke) is gone ~
My friend Lori is know for starting a song when something triggers it. Well I was noticing how clear it was yesterday and the song " I can see clearly" ( I don't know the actual name of the song, lol) came to mind. The fires are still going but I am so happy we are not breathing in smoke and we can see our mountains.
here is our view this morning
Things are real busy in the garden. I am trying to now keep up with our zucchini plant. I made chocolate , chocolate chip zucchini bread. And it is GOOD ! It tastes like Costco's choc. choc. chip muffins. Here is the recipe.
Choc. Choc. Chip Zucchini cake/bread
3 eggs
2 cups sugar
1/2 cup cocoa powder
1 tsp. vanilla
3 cups zucchini- grated
3 cups flour-all-purpose
1/2 tsp baking powder
1 tsp soda
1 tsp salt
1 tsp cinnamon
1 cup veg. oil ( I used olive oil)
Oh and don't forget to mix in the 1 cup of choc. chips.
Beat eggs, add sugar and oil. add cocoa powder. Add vanilla and zucchini. Sift dry ingredients and add to mixture. Mix well and pour into 2 loaf pans ( I use one 9"x13" Pyrex pan), greased.
Bake~ 350 loafs~ 1 hour
cake pan~ 30 min.
I am sending this in my boys lunch for their VBS this week.
While they are a way I will be.... (blogging) I mean preparing for my school learning plans And getting my Learning Room more organized. (maybe I will do some pics of what I organize. To prove...oh , I mean show what I did. Me being a piler who wants to be a filer.
It was sweet. Yesterday my 3ds9 was asking when do we get to start schooling again. Wow it felt good that he started to miss what we were doing.
I am also sloooowwwly reading through ALL the entries for the Homeschool Open House. I REALLY suggest to do the same. It is soooooo much fun !

I've had choc. chip zucinni bread or muffins before - they are good! Just popping in to wish you a good day! I'll be getting to that tag later this week, I still have one more tag backed up before yours. lol
Yep, I would have thought of that song too! You know, they say great minds think alike. Yesterday, the heavens opened up and it just rained huge drops, which was very much needed. Can you believe my family all ran away from me b/c I started singing, "The Windows of Heaven Are Open." Hmmm, go figure!
I always use olive oil too. I don't have this recipe. Mine is a chocolate zucchini bread with white chocolate chips on top. I will try this, thanks for sharing!
I'm glad the smoke is clearing for you. Ours is to, sometimes, it comes and goes. The smoke itself is lighter today, but I can smell it more, which is odd. But it's good that it's clearing up by you. :)

That sounds like a yummy bread.
I pulled my zucchini plant early. The beetles were getting on it and I didn't want them getting to my cucumbers.

Ok... I need to go get some zuchinni (sp?)!!! I think I'm the only one on the planet who hasn't planted zuchinni this year. My broken ankle has stopped me from a bunch of things :( Oh well. I will mark your page and try some CC Zuchinni bread SOON!

I love anything with chocolate! You could dip the squash in it and I'd eat it! This sounds good. My plant has only produced 2 squash so far, so I am not sure if I can get 3 cups grated or not!

Did you think of Fire On the Mountain... when all that mess started? So glad the fire is contained. I am glad your husband's asthma managed to stay under control the whole time. Glad too that the fire didn't get close enough to damage your beautiful mountain retreat.
Seems there are more places than just my neck of the woods that could use a good rain. :o(

From your picture it looks like you might get some good sunrises and sunsets out of that smoke! The year Yellowstone burned, we had fantastic sunsets here in Michigan. There's got to be a silver(colorful) lining somewhere...
With that recipe, I'm going to have to go and get zucchini. I can't believe I'm going to actually buy it, what with all I've given and thrown away in the past!!!
