Aug. 9, 2007~ Show and Tell Friday~Zucchini Pickles ~
This last week my three youngest were at VBS. Soooo I got to get some things done like...putting food up for the winter. I made apple sause, I sliced apples and froze enough for 10 apple pies. Then....I made my Zucchini Pickles. A family fav..
I start off by slicing them and the onions and let it sit with salt for 3 hours then cook them with the spices and seal them.
Here is the recipe.
ZUCCHINI PICKLES (they are like a bread n butter pickle)
6 cups of thinly sliced zucchini with peel
2 medium onions, thinly sliced
3 Tablespoons of course pickling salt
Zucchini should no more than 1 1/2 inches in diameter. Combine zucchini, onion, and salt in a large pot. Stir. Cover and let sit for 3 hours. Drain.
Add remaining ingredients. Stir often bringing to boil over med-high heat. Boil, uncovered , 5 minutes.
2 cups of sugar
2 tsp. of mustard seed
2 tsp. of celery seed
1 tsp. of Tumeric
1 1/4 cup of white vinegar
Pour into hot sterilized jars to 1/4 inch of top. Seal. Makes 2 pints.
My batch you see was a double batch.

I remember my mom canning stuff from our garden when I was little. I have not had the gumption to do that yet. I am working on getting the sewing machine to work. Maybe next year I'll put up food for the winter. I have a nice freezer I could fill. Thanks for the ideas. Lovely show and tell as usual.

I've never had the pickle squash before. However, I am a Bread & Butter eating Mommy. Let's not forget the best part the juice too. I'll have to try it, DH loves his squash. He also like it fried with bacon grease & onions, then steam it.
How interesting! My mother and grandM canned pickles but I don't think I got that gene lol. My kids don't care for them and DH only likes sweet relish.. maybe that's why? lol

I have been trying all day to get my S&T up. But the rest of my family is not co-operating. Just when I thought Mike would have a minute to down load the camera...he got a call to fix a comuter (hooray for the call, boo for the pictures) When he gets back we have to go to the grandkids after VBS program so my S&T Friday might wind up being a S&T midnite showing (reduced pricing of course) or a Saturday Matinee. I really did try sis. ):
What an interesting idea of cutting and freezing apples for apple pies later. Do you have to do anything special to them, or just cut them and flash freeze them? I might have to try that soon. Thanks for the idea. :)

Wow, I've never heard of zucchini pickles before, what a great idea to do with all that zucchini that everyone seems to have! I'm not a big pickle lover (especially since we toured the Gedney Pickle Processing Plant last year), but I do like bread & butter pickles & olives and the girls will eat any kind of pickles.
Hope you had a good day! We were visiting my mom in the Cities today - it was 99 degrees out! Hot, hot, hot - thankfully there is a nice breeze lest I become a mere puddle on the driveway. Have a good evening my friend - I have to go out to the barn now and the girls have to get their chores done and I have to rake hay - my FIL is coming early tomorrow morning with 200 bales of hay to fill us up for the winter - we are getting it early as we know where we can find it cheap and before the high fall demand that raises the prices on the already drought-stricken supply. If he brings both loads tomorrow, I guess that would make a good S&T - and oh yes, I still need to get my logo up - help Mary, I'm drowning in behind-ful-ness (I'm sure that is a word). ttfn
Wow, I love this post. I will have to print this out and give it to my mom - she's really good at trying stuff like pickling and she loves zucchini.
Like I said, I love stuff like this - the thought of making your own homemade pickles and I love pictures of it, too. But that's as far as it goes. Never did that, and I can't see it happening in the near future either. But I so enjoy it when I see pictures of it!! It makes me feel as if I'm in "yesteryear".
