NO Fail Short Bread Cookies
1/2 pound Butter-softened ( not margerine)
1/2 cup Rice Flour ( HINT: look in the Asain or East Indian food section. It is probably cheaper)
1/2cup of Berry Sugar ( HINT: this is extra fine suguar. What I do is take granulated sugar and blend it in the blender till fine)
1 1/2 cups of all-purpose flour (approx.)
Mix sugar and butter with spatula.
Add Rice flour. Mix well. Add 1/2 cup of A.P. flour- mix well with spatula- add rest of A.P. flour gradually, mixing with hands, until mixture doesn't stick to hands. ( Mix well after each addition.)
Roll into firm ball. Put on floured board. Press with hands to 1/2" thick ( do not use rolling pin) Work from outside in ( to prevent air bubbles). Cut with cookie cutter. (I use a small round cutter myself) Poke with fork. Put on ungreased cookie sheet. Bake 325*
Check after 15 minutes- if puffing up push down gentley with the back of a fork and return to oven until golden brown ( about 5-10 minutes).
I leave mine plain but you can decorate with icing. ( now for you Americans it's frosting. one f those expressions I had to get use to up here in Canada. They also call "powdered sugar"..."icing sugar"
