Jun. 2, 2008~ Tightwad Tuesday~Rhubarb Aide ~
Rhubarb Aide
This is a juice that is easy to make and is somthing like lemon aide but you can get the fruit from your own yard.
This is about maybe a fouth of what we will be harvesting from our homestead. I am also going to be making the juice and selling it at the farmers market. Then I can get somethings that would be nice to get.
To make the juice:
Cut cleaned (rinsed ) rubarb into 2 inch lenghts ( 5cm's) and freeze them( to help break down the fibers).
Then fill your pot with the frozen rubarb. Fill with water till it just covers the rubarb.
Bring to a simmer till the rubarb just begins to break down.
Cool, strain and reserve juice .
Reheat juice to pasturization and add honey or other sweetener to taste. Can or freeze juice.
Enjoy !!!

I didn't realize that you could make rhubarb juice. Great to know. I usually just do rhubarb pie and sauce. I hope you sell lots at the farmer's market. You may do really well, since it is so unique sounding.
Boy does this bring back memories! We grew rubarb on the ranch growing up. I love the stuff but the harvesting , canning and freezing went on for days! Love rubarb/strawberry pie! We never made juice. I bet its awesome. Would be good with strawberries. Have a wonderful vacation.
Wow, look at all your rhubarb! We have a rhubarb plant we planted last year ~ it's getting bigger, but not nearly that much. I never thought I liked rhubarb, but then my MIL made some rhubarb dessert bars and are they good - only about 90% sugar. lol. And a friend of mine makes rhubarb juice and cans it. In fact, we just had some at the last Ruby Girls meeting. It is good too and I'm sure very good for you. I don't have a TT ready today but will work on one for next time or whenever you are back. As soon as I find some rhubarb, I'm trying this! It sounds so refreshing and delicious, especially on hot days, which are rushing towards us here in the Valley of the Sun (it hit 105 yesterday already :P).
