One great Tightwad dinner is a baked potato that is topped for a main dish. This is one dinner I really want to make a family weekly tradition.
You can serve a baked potato with steamed broccoli, cheese sauce, sprinkled with bacon bits and feed a family for almost nothing.
To save on the cheese sauce try this recipe.
Cheese Sauce
Melt 2 tablespoons of butter in a sauce pan. Blend in 2 tablespoons of flour. Combine it with 1 cup of milk, and salt and pepper to taste. Cook until sauce thickens. Add a half a cup of shredded cheddar cheese and cook till smooth.
Another Yummy potato is ... to top a b.potato with chili and cheese. yuuuuummmm

We have done that with potatoes many times. Sometimes we will add a salad to the meal to make it a little more filling. Very easy meal to do! You gotta love a meal like that! :-)
Mmmm...baked potatoes are a cheap meal. In England they call them 'jacket potatoes' and sell them at stands like hot dogs, with lots of different toppings.
And I love cheese sauce, I always make it extra cheesy!

It's funny that you posted this as your frugal idea. I just added this to our weekly menu! I also use that exact recipe for my cheese sauce, except I don't measure anything. :D
