~ Tightwad Tuesday~ Wacky Cake ~

 ( :cook Please notice the measurement for cocoa powder.  I am having brain fog and made a mistake two times.  It is correct now.:blush )

Cooking from scratch is usually more Tightwad'ish.  I have been making cakes from scratch for the last (almost) 18 years.  One of my most favorite cakes is a ....Wacky Cake.

It has no eggs and uses vinegar and baking soda instead of eggs.  Plus it is soooooooo easy !   Tightwad'ish and easy what can be better  ????

So ....with no further a do.

Chocolate ( or Carob ) Whacky Cake

Mix together dry ingredients...

3 cups of all purpose flour

1 cup of sugar

1/2 cup of cocoa powder ( or carob)(:oopsI forgot to add this.  I was tired last night.lol)

1 teaspoon salt

2 teaspoons baking soda

Then add liquids...

1/2 cup vegtable oil

2 Tablespoons vinegar

1-2 teaspoons vanilla ( I use 1tsp.)

2 cups of water

*Stir together till just mixed and pour into cake pan.  I use

9" x 13" .

Bake at ...

350 degrees till done . ( about 20-30 minutes)

( ohhh I didn't forget to tell you to grease and flour the pan...IT DOES NOT NEED IT !   That is what I meant by EASY.

I was asked...

"no greasing the pan?? Does that work with glass pans, too? "

answer...

yes,  I usually only use my Pyrex baking pans.  It is soooo easy to serve. Enjoy !

There are only a few big ways to save money but there are a lot of small ways  that all adds up.

Oh I remember my mom making this wonderful cake...did you forget to add the chocolate or carob on the recipe? Its really yummy! My mom serverd it hot with whipped cream.

I am going to write this recipe down and give it a try sometime! It sounds a little too good to be true - no greasing the pan?? Does that work with glass pans, too?

I'm so glad your internet is up and running again, Mary! I'll bet it was very peaceful without it, though, wasn't it? <sigh> Such a line we walk with this thing!

Thanks for calling me organized. I never think I am, I like to be, but I always feel like I'm not quite 'there'.
We haven't moved our bedroom upstairs yet, Hubby is waiting for me to empty all of the school stuff out...no small task!
I'm enjoying 'The Heart of Wisdom'. I'm glad I bought it, it's giving me a lot to think about regarding our homeschool.

Now I have something that I can bake when I run out of eggs, which happens quite often. But I have to make sure that I get more vinegar and hide it away. My 2 little girls used up the whole bottle pouring it over baking soda - while I was sleeping in. I hope that this recipe works for me, because I have never had success making cakes from scratch. The family only likes my cakes from boxes.

I never heard of this till I married my husband. It is a family favorite for all his family and extended family. It is a yummy cake. Jon's aunt sometimes called it Sad cake, till she made it for grandpa's birthday and he thought we was poking fun at him. heheh.

Handsome and I




First , I am a daughter of the King almighty and a a wife to my Handsome of 17 years. A mom of 4 on the go boys 15, 13, 9, and 7. I grew up in the states but married my Canadian sweetheart and moved up north. We live in the southern part of British Columbia , Canada on our homestead.
