Oct. 20, 2008~ Tightwad Tuesday~ Brown Sugar Trick In Baking ~
Brown Sugar Trick In Baking
One trick that saves money in baking is to use this tightwadary trick of mixing 1 to 2 Tablespoons of molasses to 1 cup of white sugar and measure the amount you need for your recipe. I tend not to use this on my morning cereal but.... you can. In baking you cannot tell the difference and you save money. You can save even MORE if you buy your sugar and molasses in bulk. We have personally bought 10 kg (22.5 lb) bags of white sugar and we buy 12.5 kg ( 27.6 lbs) of molasses. They do not go bad and you can make a lot of goodies with this. I guess I will have to share my gingerbread recipe sometime. [0; Well, I have to admit I am holding out on my recipes for a reason. I am in the midst of making a ebook cook book of all these recipes and it is to come in the near future.

"If mothers could learn to do for themselves what they do for their children when these are overdone, we should have happier households. Let the mother go out to play!
If she would have the courage to let everything go when life becomes too tense, and just take a day, or half a day, out in the fields, or with a favourite book, or in
a picture gallery looking long and well at just two or three pictures, or in bed, without the children, life would go on far more happily for both children and parents.
The mother would then be able to hold herself in "wise passiveness’ and would not fret her children by continual interference even of hand or eye - she would let them
be." ...Charlotte Mason
I just did this over the weekend. I needed brown sugar for the crumble topping on an apple pie I made and I was all out. The molasses/white sugar combo worked perfectly!
I'll have to try this one. We do buy sugar in bulk, but not molasses because I never use it. Maybe I will start.
Thanks!

I forgot about using molassas with white sugar, mom did it all the time. However Molassas is very expensive here. I will have to look at the natural food coops to see if they carry it in bulk. We buy white sugar in 10lb bags ( it actually comes 2 10lbs bags to a pack). We also found brown sugar in 5lb bags. ( not cheap!) We will have to compare gingerbread sometime. It is a family favorite.
I think it is funny that you are working on an e book for your recipes. ( awesome idea) I am putting all our recipes together in a book for the kids. I am slow at it though. I guess it would make a great AP project as I started it a year ago. I am not happy with the format. The web page I started the book on is no longer available and I had to start over after having nearly half of the recipes done. So now I am reformating in PDF. But not sure I like the results. Well off to do something...It is finally cold! Need to move to stay warm! HUGS
Well, forgive any typos here, I am still on cup number 2, see my yesterday's Simple Woman's Daybook for reference to cafine. I went to Wal-Mart a month ago, I was going to make Boston Baked Beans, got everything but Molases, they were out. Went back 3 days later, still out. Went back 3 more times before they finaly got some in. So, my theory, they got us on this one, they anticipated all of us smart cookies cutting corners and rose the price of molases and brown sugar at the same time and then caused a shortage. Now I do not anticipate this one to last long, Thanksgiving and Christmas are coming, and those price gougers are not gonna get grandma's cookies because she cannot afford either one. So they will fix this one, because Christmas is just not Christmas without grandma's cookies. Seriously though, I have heard of this but never tried it, dh is on board about cutting cost, but does not like molases, so I have to sneak that one in, same as Lemon Pepper (his grandma's secret ingredient, he swears he hates it, but when I use it food tastes just like grandma's hehehe). I gotta tell you though, living on a commune looks better and better each year, but then I don't like to many rules so I would have to leave. I'm sorry for rambling, this is Mary's page, I cannot wait for your recipe book!!!! Off to get more coffee....

I have long known how to make substitute brown sugar using white sugar and molasses, but another DUH moment here. Never thought about it as being more frugal. Hmmmm.... Will have to recalculate! LOL
