Cooking dried beans is cheaper than canned beans but there is a quicker and cheaper way to cook them. Less cooking time equals less spending money on cooking them.
How to ...
Soak beans overnight. Then you freeze them in 2 cups or 4 cup amounts. Then when you need some beans for a meal you pull them out and then cook them. It will take about 20 minutes to cook.
Why so easy and quick ?
... It is because when frozen the water breaks down the cellulose strands of the cells which is what happens when you cook beans for hours. You can even save MORE time by cooking the beans in a pressure cooker !
Here is a neat guide !
Dried Bean Guide Use this guide to gauge how much dried beans to cook.
1/3 cup dry beans
1 cup cooked beans
1/2 cup dry beans
1 1/2 cups cooked beans
2/3 cup dry beans
2 cup cooked beans
1 cup dry beans
3 cups cooked beans
2 cups (1 pound) dry beans
6 cups cooked beans

"If mothers could learn to do for themselves what they do for their children when these are overdone, we should have happier households. Let the mother go out to play!
If she would have the courage to let everything go when life becomes too tense, and just take a day, or half a day, out in the fields, or with a favourite book, or in
a picture gallery looking long and well at just two or three pictures, or in bed, without the children, life would go on far more happily for both children and parents.
The mother would then be able to hold herself in "wise passiveness’ and would not fret her children by continual interference even of hand or eye - she would let them
be." ...Charlotte Mason
I would keep enough water that the beans are covered.
Tina,
No Tina you do not pre cook the beans. You just soak overnight and then and then freeze them. WHEN you need the beans you THEN cook them. [0= I hope that made sense.
Hi Mary!! This is a great tip!! I use beans often, and I would really prefer not to use the canned variety. Did you know that a canned kidney bean and a cooked dry kidney bean taste and feel totally different? We all like cooked dried kidney beans, but I can't even gag down the canned ones. I'm off to soak some beans and try this. Beans double in size when you cook them, don't they? How do you measure for a recipe that calls for a can of beans?

Oh, Mary, that's terrific! I've been intimidated to use dry beans for soooooo long now, but I can soak and freeze easily! You've made these seem do-able for me, and I thank you. That handy bean guide is great too; I've copied it down and am going to put it in my Recipe Notebook I'm creating. ((HUGS))
I finally got my broomstick skirt on here, if anyone gets a chance please go to mine scroll down and go to Erica'sl story, it is worth the time. Ok, so I'm a little behind on my reading, lol! Actually, I jumped to this post from the HSB Front Porch. Nice job on being Fetured Blogger of the Week! Can't imagine how you haven't been it before, lol! Anyway, what a neat hint for cooking beans. I never thought of it. I tend to save time later by taking a day to can all my dried beans myself. It's not very difficult and I have beans ready all the time. However, I so have try this idea of yours. Thanks for the hint!
