If you have been following my recent events this last week or so on my blog you might have noticed that I have been doing a science experiment. I was trying to catch the wild yeast from the air and and seeing if I could make something yummy with it. What in the world are you talking about you might be asking ?!?

Well, I have started my own sourdough starter and made sourdough bread with it. ((happy dance)) If you want to see how to do it watch Serene's Sourdough video and to learn how to make your own starter go watch this video Part 2 of Serene's How To's.

I was asked ..... "So, I when you said you "started your own sourdough starter" was that from the yeast you "caught"? "

Answer....yes. I started my own starter by putting in a cup of water and a cup of rye flour in a sterilized bowl and kept adding a cup of each for the 7 days. The rye flour catches the wild yeast from the air real well. Serene talks about that in her video.

For those who are waiting to see my pics of my science experiment ........here they are.
First you start off by sterilizing your non matalic bowl. I boiled water and poured it into the non matalic bowl till it was full. I let it sit for a couple minutes and then poured the water down the sink. I let my bowl cool down and then added one cup of light rye flour and one cup of water and stired well with a non matalic spoon. Each day for 7 days you sterilize a new bowl and pour your starter and one more cup of water and one cup of light rye flour and mix well. The reason I am stressing the non matalic spoon and bowl in only for your starter ..(it doesn't matter when you are mixing the dough to bake your bread) is b/c the metal will not let the wild yeast grow. After you have done this for 7 days you are now ready to make your bread. You only have to sterilize it for the first 7 days and then after that sterilize your bowl only once a month.

This is what my starter looked like. The bubbles and it being frothy is a good sign that you have caught the wild yeast from the air. Now each day is gets better and better. I have noticed now that I have saved a bit of my starter and now have added rye flour and water for a second go it is even more frothy than the first week. It is sooooooo neat to watch this actually happen.

Here is my buttered pans filled with the sourdough batter. It is more like a batter than a firm dough. I have to let you in on a secret. This recipe makes 6 loaves of bread. Please do not make 4 loaves !!! I thought my bread pans were bigger and I thought I had filled them up 3/4ths of the way. Nope !! They were TOO FULL. The next morning they had over flowed onto my counter. It took me 30 minutes cleaning it up. So........ learn from my mistake. The recipe makes 6 loves not 4, LOL.

Recipe
Pour 2 quarts of starter in very BIG bowl
Add and mix well. I suggest to watch Serene's video to see how. ( 5 to 10 minutes)....
6 1/2 cups of light rye flour
6 1/2 cups of spelt or whole wheat flour
2 1/2 Tablespoons of salt
1 1/2 quarts of water
You want it to look like oatmeal consistancy. Fill 6 bread pans 3/4ths the way full ( into buttered bread pans).

Let it sit for 7 hours before baking. YES , I said 7 hours. [0=

Then bake at 350* for one hour.

Here is a pic of my first attempt of making sourdough bread. It was a BIG succes !! ((((HAPPY DANCE)))) It makes the best toast.
