Two More Sourdough Recipes

I am now hooked on sourdough. It is a wonderful way to be frugal and healthy minded. I wanted to share two more sourdough recipes with you this week that you can use with last weeks sourdough starter that I shared about. (This is part 2 of Serenes Sourdough. Towards the end of this video shows how to make your own sourdough starter ) Also lasts Show and Tell Friday goes into how to make this sourdough starter. I love that I can now make biscuits and pancakes without having to use the expensive baking powder I have had to. My second ds cannot have the regular baking powder. It has corn starch in it also I cannot use the homemade baking powder recipe because it calls for cream of tartar that he is also allergic too. So sourdough is a wonderful answer for me. The sourdough biscuits and pancakes also are in a form that is low glycemic too and your body asimilates it slower and because of this it then doesn't spike your insuline.

Amish Sourdough Biscuits
1 cup of starter
1/3 cup of oil
3/4 teaspoon of baking soda
1/4 teaspoon of salt
1 cup of flour
Mix starter and oil. Add dry ingredients. Mix well. Drop by tablespoons on an ungreased cookie sheet. Bake at 350ºF. for 10 to 15 minutes.
. Sourdough Pancakes
2 cups sourdough starter, room temperature
2 tablespoons sugar
1 egg
4 tablespoons olive oil
1/2 teaspoon salt
1 teaspoon baking soda
1 tablespoons warm water
In a large bowl, add sourdough starter, sugar, egg, and olive oil; mix well.
Dilute 1 teaspoon baking soda in 1 tablespoon of warm water. Important: Only add baking soda to batter just before you are ready to cook the pancakes. Fold gently into the sourdough batter (do not beat). This will cause a gentle foaming and rising action. Let the mixture bubble and foam a minute or two.

Heat up a lightly-greased griddle until fairly hot; then pour batter onto the griddle. For each pancake, pour 1/4 to 1/2 cup batter onto hot griddle. Cook 1 to 2 minutes on each side or until golden brown. Serve on hot plates. .

This sounds wonderful, Mary! I have a new recipe that makes artisan bread perfectly, every time. Guess I'll have to share that one soon. :) I may get over my intimidation of sourdough bread - you're inspiring me!!!
So what flour is in your starter? (I never could watch your video because I don't have the sound going on my computer right now.) Are you making partly rye sourdough pancakes and biscuits? I've still got my sourdough going. But, I've got it in the fridge right now, because I've got a little bug right now and don't feel up to it.
I think I need to get on the sour dough bandwagon. It doesn't seem that hard to get started and it would be a nice alternative! I'm going to have to go back and read the other info!

Sourdough pancakes were my grandpa's specialty! OK, as soon as I get some more flour I will give this a try. I used up our flour supply yesterday making JoAnn's garlic bread, which is supreme!
