I learned early on in my married years how to make cucumbers not bitter but sweet. Are you on the edge of your seat waiting for these wonderful words of wisdom ??? [0= It is not a old Chinese secret but it is simple and only takes about one minute to do.

The wonderful cucumber secret is to ... cut of about 1/2 an inch off one end of the cucumber and rub with the end of the cucumber in a circular motion for one minute. Then cut a thin slice off where you rubbed ( it will be white and foamy ),discard, cut the cucumber the way you want, and enjoy. Some how by doing this, it pulls out any bitterness that the cucumber may have.

What a cool trick! I do remember my grandmother doing this but had no idea why or what she was doing! I will start doing this!
We ate a ton of cucumbers growing up..sandwiches, cucumber and onion salad, even stuffed cucumbers ( I always thought this was gross!). My favorite thing to do with cucumbers is to grate them, drain, ( let sit in colander for a while), and mix with cream cheese. Add salt and pepper to taste. Spread the mixture on a flour tortilla. Roll the tortilla up.. Cut into half inch rounds. Great snack! Quick and easy. You can mix the grated cucumbers with yoghurt too. This is awesome on a green salad. If you put the yoghurt and cucumber mixture through the blender it makes a normal consistancy salad dressing. Low cal and low fat. Very good! I add lemon and garlic seasoning to it.

I finally had some time today to check out the comments on my blog. Thank you for all of yours from my last few posts. I wish we could get together too! If it never works out on this earth we definitely need to make it a date in heaven! With lots of time for knitting too! :)
Love seeing pictures of your garden! Mine is small but the ground in our back yard is bad. Maybe by next year we'll be able to bring in some better earth and our compost we started this year will help too. For now I will enjoy what tomatoes we might get and a small bit of lettuce and dill. (so excited to have dill!! PICKLES anyone?)

the older generation has always kept change in jars, banks, tins for the younger generation and now that generation is keeping it for the ones following them it seems to keep rotating round
What a great tip! I hardly buy cucumbers anymore because they have been so expensive but now I know what to do to prevent that bitterness! Thanks for sharing.
