Weekly Menu

I realized a week or two ago that I had been forgetting to post my weekly menus. Not that anyone cares what we are eating for dinner...but it seems to help me get into gear with planning and actually following through. I actually have done better the past month or so in getting better meals on the table for my family. Usually I go in spurts, so I hope this latest "spurt" lasts a little longer.

Here is what we're having for dinner this week...

Monday -- Meatloaf, baked macaroni and cheese, steamed broccoli and we had pumpkin muffins with cream cheese frosting for dessert!

Tuesday -- Crockpot Chicken Parmesan Chicken (a yummy chicken and rice meal with onion soup and parmesan cheese in it. I love finding yummy crockpot recipes, so if any of you find any new and good ones - please share!)

Crock Pot Parmesan Chicken

1 package dry onion soup mix (using my homemade mix from the Make a Mix cookbook)

1 1/2 cups milk

2 cans condensed cream of mushroom (also using a homemade mix)

1 cup converted long-grain white rice

6 skinless, boneless chicken breasts halves (I usually just throw 4-5 whole chicken breasts in there)

6 teaspoons butter

pepper to taste

1/4 cup grated Parmesan cheese

*mix the dry onion soup, milk, mushroom soup and rice in a medium bowl

*put chicken in bottom of a greased slow cooker

*place 1 tsp butter on each chicken breast

*pour soup mixture over all

*season with salt and pepper

*sprinkle with parmesan cheese

*cover and cook on low heat or 8-10 hours (my crockpot gets too hot, so I lower this cooking time to about half the day instead)

Wednesday -- sloppy joes and fries

Thursday -- Little pizzas (I will be gone on this evening)

Friday -- no cooking - scrapbooking night at my house! Come one and come all - no kids allowed! Have some good mommy fellowship at my house! (with yummy snacks of course - speaking of which, I need to figure out something yummy to make!)

for the Chicken crockpot recipe -- How do you think it would taste with Cream of Chicken soup instead of Mushroom? We don't like mushrooms and have this yuck factor associated with the idea of the soup, even if it doesn't taste anything like it lol.... or do you REALLY not taste it that much? The rest of the recipe sounds FABULOUS!
