Another Monday...time for another week of new recipes to try! This week my new recipe is Toasted Almond Chicken, which I am fixing tonight for dinner! I'll let you know if it turns out to be a keeper!
Monday -- Toasted Almond Chicken and Green Bean Casserole
Toasted Almond Chicken
6 chicken breasts
1/8 tsp. salt
1/8 tsp. black pepper
3 Tablespoons butter or margarine, divided
1 1/2 cups whipping cream
2 Tablespoons orange marmalade
1 Tablespoon Dijon mustard
1/8 teaspoon ground red pepper
1 package 2.25 oz) sliced almonds, toasted
*Place chicken between 2 sheets of plastic wrap and flatten to 1/4 inch thickness, using a meat mallet or rolling pin. Sprinkle with salt and pepper.
*Melt 1 1/2 tablespoons butter in large skillet over medium-high heat, add half of chicken, and cook 2 minutes on each side or until golden. Remove chicken from skillet and repeat procedure with remaining chicken.
*Reduce heat to medium; add whipping cream and next 3 ingredients to skillet, stirring well. Add chicken, sprinkle with almonds and cook 8 minutes or until sauce thickens.
Tuesday -- Vegetable soup in the crockpot
Wednesday -- little pizzas that we never had last week!
Thursday -- Lasagna
Friday -- my brother is coming into town and our family will all be going out to eat with him!
