If you've been reading my blog on Tuesdays, you know that I've been doing seasoning packets (taco and stir fry), and also other processed staples (chocolate syrup mix and homemade salsa). Today I'm going to share with you how to make your own flavored rice side dishes. Yes, you can make your own inexpensively and save your $1/box! And if your home is like mine, one box is NEVER enough to satisfy the savages, lol!

Chicken Flavored Rice Dish

3/4 cup long grain brown rice

1/4 cup broken spaghetti (or use more rice)

1 tablespoon dried onion

1/4 teaspoon garlic
-
1/4 teaspoon thyme

1 tablespoon dry parsley

3 chicken flavored boullion cubes or 1 tablespoon powdered boullion
In a 2-qt saucepan, melt 2 tablespoons of butter. Add rice and pasta, and sauté until the pasta begins to brown. Then add 2 1/2 cups of water and the five spices listed above. Bring to a boil, then turn the pan down to the lowest setting possible, cover, and let simmer. I've had brown rice take anywhere from 20 minutes to 45 minutes to soak in; I guess there's no rhyme nor reason why. Therefore, it's important that you keep an eye on the pot and stir occasionally.
Beef Flavored Rice Dish

3/4 cup long grain brown rice

1/4 cup broken spaghetti (or more rice)

1 tablespoon dried onion

1 tablespoon dry parsley

3 beef flavored boullion cubes or 1 tablespoon powdered boullion

1 tablespoon soy sauce
Use the same directions as above for the Chicken Flavored Rice Dish, only add the soy sauce when you add the spices and water.
These can be doubled quite easily, and in fact I do double them every time I make them. If we have leftovers, so much the better. Soft fry a whole wheat tortilla (pre-heat a non-stick pan on medium heat and toss a tortilla in when heated. Keep turning the tortilla for about a minute so it doesn't burn, then flip it and repeat turning. Tortillas are done when they begin to inflate with air - did you know the tortillas you buy in the store aren't 'done' all the way? Now you do. :), then fill with re-heated rice, add some cheese and salsa if you like, and voila! You have a hot, filling, quick lunch for the kids next day.
