Tightwad Tuesday...

Good Morning, and welcome back to Tightwad Tuesday with Canadagirl!  If you have a tip to share, please do go visit our lovely hostess, Mary, to join in.

If you've been visiting me since I began participating in Tightwad Tuesday, then you will know that I have an aversion to pre-packaged, processed foods.  I think that, for me, what makes little to no sense regarding their popularity is the fact that they really don't save you time or money.  Take for instance today's tip:  making your own muffin mixes instead of purchasing them.  Homemade muffins are a great way to wake your family up in the morning; who doesn't love waking up to the delicious aroma of something baking?

I contend that there is no more work involved to opening a box, adding the egg, milk, and/ or oil, then there is in measuring out flour and baking powder and adding egg, milk and/or oil.  You still need to prepare the muffin tin, you still need to put the mix together; what's so 'convenient' about that?  Nothing.  It's just one more way that society has been brainwashed.  If you make it yourself, you know exactly what goes into them (love), and what doesn't (preservatives and additives).  So, without further ado, please enjoy these muffins - my family certainly does!

Homemade Blueberry Muffins

1 3/4 cups unbleached, all-purpose flour

1/3 cup sugar

2 teaspoons baking powder

1/4 teaspoon salt

1 beaten egg

3/4 cup milk

1/4 cup cooking oil

3/4 cup frozen or fresh blueberries

Preheat oven to 400°.  In a mixing bowl, combine flour, sugar, baking powder, and salt.  Make a well in the center.  Combine egg, milk and oil, and then add all at once to the flour mixture.  Stir just until moistened (batter will be lumpy).  Gently fold the blueberries in.

Lightly grease a muffin tin, and then fill cups 2/3 full.  Bake for 20 minutes, or until golden.  Remove from pan and serve warm.  Makes 10-12.

I agree there isn't much more work in making muffins from scratch. I just pulled pita bread out of the oven, so much better than store bought and cheaper and healthier too!
