If you are a frequent visitor to my blog on Tightwad Tuesdays, then you know that I'm a bit obsessed with making food staples that you would ordinarily purchase pre-packaged and processed from the store. Since I haven't run through all my recipes and tips yet, get ready for another one: Homemade Red Sauce. Homemade Red Sauce is a delicious, economical, and versatile item to have in your freezer or to make up fresh in about 30 minutes. You can use it as pizza sauce, spaghetti sauce, in your soup bases, or as a dip for your Italian/bread dishes. This recipe makes enough for me to freeze in two portions, and each portion provides either one pasta meal for 4-6 people, or enough sauce for two homemade pizzas (one cookie-sheet size, and the other a round stone size). I *love* having this is the freezer, and hope you enjoy it as well!

Homemade Red Sauce
one medium to large onion, diced
4 garlic cloves, pressed
3 tablespoons olive oil
3-14 ounce cans diced tomatoes
1-6 ounce can tomato paste
3 teaspoons sugar
3 teaspoons dried oregano
3 bay leaves
salt and pepper
In a dutch-oven size pan, sauté the onion and garlic gently in olive oil for 5 minutes, until softened but not browned. Add the tomatoes, tomato paste, sugar, oregano, bay leaves, and salt and pepper to taste. Stir well.
Bring to a boil, cover, and simmer gently for 20 minutes, stirring occasionally, until the sauce has become quite thick. Remove the bay leaves and adjust the seasoning to taste.
This goes wonderfully on top of French Bread Pizza. Try it sometime! Ü

I love this sauce!! My family also loves it so much so that when I use the store bought stuff they complain!!
Oh well! I'd rather have them enjoy my stuff over the stores anyday!!

ohhhh this looks YUMMY. ((sniff sniff)) to bad that there are too many that are allergic to tomatoes in this household. Keep up with the recipes. I love finding non packaged recipes for food !!!

I'm going to one-up you here (you're welcome; that's what friends are for) and mention that I made a sauce similar to this yesterday, but with FRESH tomatoes! Farm market tomatoes, yet. However, I used to make it with canned tomatoes years ago, and then for about the last decade (note that, significantly, 4th child is almost 10 yrs old) I didn't make it at all, but rather opted for canned spaghetti & pizza sauce. So that confession makes up for my one-upping right there. I am back to making sauce now b/c of Cheez' diet, and Hubby is so glad! (Except when I forget the tomato paste, like yesterday.) Cheez' diet is also why I use fresh tomatoes.
Oh, and I add carrots to mine (chopped in food processor with garlic & onion), and sometimes green/red peppers. The littles don't care for peppers, but when they are chopped up like that, they don't even know they are there (and I don't tell them).
