As requested, here is the recipe for my Red Beans & Rice dish that was on my menu for the week:
Red Beans & Rice:
1 pound kielbasa, cut in half length-wise and then sliced
½ onion, chopped
3-4 cloves garlic, pressed
1 red, orange, or yellow bell pepper, chopped
4 cups (2 cans) red beans (drained)
1 can chopped tomatoes with juice, or 1½ - 2 cups fresh tomatoes
½ tsp. thyme
¼ tsp. cayenne pepper
salt and pepper to taste
4 cups brown rice, cooked
In a skillet over medium-low heat, cook kielbasa for about 2 minutes. Add onion, garlic, and pepper, and sauté until veggies are tender. Add beans and tomatoes with their juice. Season with thyme, cayenne, and salt and pepper to taste. Serve over rice, or add to rice, stir, and serve.

YUM! We have switched from "basa" as the kids call it to Chicken sauage...before you say yuck...try it sometime. We get the one with mozzerella and garlic. Sams Club sells it. Its great on the grill. We are slowly working to get everyone in the family in the habit of eating a serving size. This helps with the budget too. The Chicken Sauage can be pricy...recently we stocked up because they had it at the food bank where we get our food for the churches food pantry. It only cost 18 cents a pound!

Thank you sooooooo much for sharing your recipe. ((hugs)) How much is in the can of tomatoes. I will have to try to replace it with something so I need to know how much is in the can. I have two ideas up my sleave. One chicken broth but the other idea is canned roasted peppers. It is a good tomatoe replacent I have heard. I miss tomatoes sooooooooo much ! I use to eat them like apples. Not any more. ((sigh))
