Squash Pie

It doesn't seem the right time of year but I'm making two.   

We had 7 winter squash in the garage still and they were trying to go bad on me so I had to cook them up.  I baked all of them yesterday, we ate one with dinner and I was planning to can the rest today.  I couldn't help myself though and I made a little custard up last night.  When dd tasted it she asked me to make pie with it.  Well if you knew how picky my kids were about food, you'd understand how excited I was that my own dd liked this squash custard.   So of course I had to say yes!   I made two pies up, they're baking now and smell so delicious!  There wasn't a whole lot of squash left at this point so I decided to freeze it for another time.

mmmmm.....I wish I had some whipping cream around.
