Super Yummy Pecan Chicken Salad... Try It OUT! Yummmm!

Super Yummy Pecan Chicken Salad...

Ready for a GREAT recipe for those hot Summer days? This one is TOPS!
We make up HUGE batches and enjoy easy lunch meals that are simply
fabulous--and usually filled with guests who WANT SOME!
Cindy and Elisabeth


4 cups cooked and diced chicken breast
1 cup finely diced celery
3 tablespoons lemon juice
¾ cup toasted crushed pecans

Combine and chill for 1 hour.

Dressing:
1 cup mayonnaise
¼ cup sour cream
1/2 –1 teaspoon salt
White pepper to taste
1 teaspoon dry mustard


Mix dressing ingredients and combine with chicken mixture. Serve on a
lettuce leaf with other tea goodies!

POCKET SANDWICHES
2 1/4 cups baking mix
2/3 cup milk
1 cup ground beef
1 onion, chopped
2 tsp. chili powder
1 tsp. garlic powder
1 tsp. salt
1 cup cheddar cheese, grated


Make a dough out of baking mix and milk. Roll out into a rectangle.
Cut out large squares and fill with meat filling. Bake at 350° for
30 minutes. *ham and cheese, broccoli and cheese, taco meat or just
cheese can be used as fillings.



POUND CAKE
2 3/4 cups sugar
3 cups flour
1 1/4 cups margarine or butter, softened
1 tsp. baking powder
1 tsp. vanilla 1/4 tsp. salt
5 eggs 1 cup milk

In a large bowl, combine sugar, margarine, vanilla and eggs. Beat on
low until mixed, about 1 minute scraping bowl constantly. Beat on
high speed for 5 minutes, occasionally scraping the bowl. Mix flour,
baking powder and salt. Beat in alternately with milk on low speed.
Spread in a well-greased 10x4 tube pan. Bake at 350° for 70 to 80
minutes or until a toothpick inserted in the center comes out clean.
Cool 20 minutes in the pan, then remove onto a wire rack and cool
completely. Serves 8-10.



PEANUT BUTTER SNACKS
¼-½ cup honey or corn syrup (to taste)
1 cup dry milk
½ cup peanut butter

Combine all the ingredients and roll into 1-inch balls. These can
then be rolled in coconut, sunflower seeds, granola or nuts. Store
in an airtight container. Makes 1 dozen.

LEFTOVER HINTS...


~Leftover melted chocolate from making candies? Pour it into a small
non-stick cake pan, smooth it into an even layer and refrigerate
until hardened. Then pop it out onto a cutting board, chop it into
small chunks and store it in the fridge to be used later in any
recipe that call for chocolate chips.

~Spread margarine on leftover hamburger and hot dog buns. Broil.
Serve with jelly for a different toast. You could also spread with
garlic butter and/or Parmesan cheese and broil.

~For a new twist on oatmeal, add a spoonful of peanut butter and
stir until it is melted. Then sprinkle a few chocolate chips on top.

~Spread leftover sloppy joe meat in a casserole dish. Place sliced
American cheese over the meat and top the cheese with homemade or
refrigerator biscuits. Bake at 350° until the biscuits are done.

  •    Set up “Work Centers” for each step of the cooking process—for example, have a work area for preparing your homemade bread, another for mixing “wet ingredients” and yet another for chopping, etc.

 

  •    Buy measuring spoons and cups to leave in your storage containers for staples like flour, sugar, baking mixes, etc.

 

  •     Need menu ideas (EVEN after all we include here-ha!)? Keep your favorite take-out menus in a notebook. Plan homemade versions of your favorite take-out meals!

 

  •    Try EASY Bulk Cooking! Yep! All you have to do is double your recipe when you are preparing a meal. Serve half, store half. Then, you will have a complete meal, ready-to-warm later on a busy day. No more eating out on those stressful days!

 

  •    Keep kitchen cleaning supplies and tools in a bucket all together. You won’t waste time hunting for what you need and you will also be able to glance to see when you need to re-stock your essentials.

 

  •   Don’t forget Crock-pot cooking! Not only are your meals easy to prepare, but the nutrients are preserved in the dish! Be sure to use your crock-pots for your stove-top dishes.  Less mess. Less work. And, for those like me—less likely to burn! :) Try out your soups, stews, meats in your crock pot! You will LOVE IT!

 

  •    Leftover veggies? Meats? Keep in baggies for your soups! Easy, fast, and you don’t waste those bits!

 

  •    Clean as you cook! Use that time waiting for your meal to cook so you do not have that after meal mess awaiting!

 

  •      Make your own recipe book! Why not work through all of those old cookbooks and recipe books to collect your favorites (the way YOU cook them/like them) into your own recipe notebook? Not only can you save space in the kitchen, but you can also save space in your schedule hunting up those recipes when you are in a pinch. OH! And also less boo-boo’s with those recipes that are not exactly what you like. OH! And...what an heirloom for your family members!

Save on Groceries Before You Leave Home

             One of the easiest ways to save money on your grocery  bill starts before you even leave the house. It's no extra work, you  don't have to deprive yourself of anything and you don't have to clip  any coupons. What is it? Stop wasting food.

             On average most families throw out 50% of the food they  buy. If you have trouble believing that then watch your family's  eating habits for the next few days. How many times did your child  eat only half of his lunch or dinner or drink only half of his glass  of milk or juice? How much food gets thrown away when you wash  dishes? How many fruits and vegetables have rotted and been tossed? 
How much meat have you thrown away because it is freezer burned? And  what about those  leftovers in the fridge or the cartons of sour milk?

             If this is you, do you realize if you spend $400 a month  on groceries you are literally throwing $200 of it into the trash?  What would you think if someone you knew took two $100 bills and  threw them away?!? That would make dumpster divers out of  the most  genteel among us.

Here are some ideas on how to help you to stop the waste:

    1. Only fill a child's (or adult's) glass half full if they  normally don't drink it all. You can always give them more when that  is gone. If they do have left over milk or juice at the end of the  meal put it in the fridge for them to finish at another time.

   2. When you get ready to cook a piece of meat like a roast or  chicken, plan ahead. For example, when I take a roast out to thaw I  don't think, “Ok, we'll have roast and mashed potatoes tonight.” But  I think “I will have roast and mashed potatoes tonight, Bar-B-Q beef  tomorrow and beef and noodles the next night.” That way you won't  find yourself  three days later gazing guiltily at that dying  leftover roast thinking, “I really should do something with this but  what?” and then end up throwing it out a week later.

   3. Check your fridge the night before you go to the grocery store.  That way you can plan your menus and choose what to buy based on the  leftovers you have.

   4. If all else fails, make one night a week as leftover night.  That's when you set out all your odds and ends of leftovers for  everyone to polish off. This is especially good if you do it the  night before you buy groceries because this leaves your fridge empty  for the new things you are buying tomorrow.

Ready for HOMEMADE Hot Cocoa???

 

Here are 2 EASY Recipes that have been favorites here at our house. Ready to cuddle up for a cozy evening? Try these!!

 

 

Swiss Miss Cocoa Mix

 

1 16-oz. box of non-fat dry milk
1 C. Sugar
3/4 C. cocoa


Sift all ingredients together three times. Store this mixture in a tightly sealed container in a cool place. When ready to use, you can add a couple of heaping tablespoons to hot water

 

 

INSTANT COCOA WITH

MARSHMALLOWS

 

8 1/2 cups (25.6 ounce package) nonfat dry milk

1 1/2 cups (6 ounce jar) non-dairy coffee creamer

3 cups (16 ounce package) instant chocolate drink mix for milk

1 1/2 cups confectioners sugar

1 1/2 cups miniature marshmallows

 

In a large bowl, combine all ingredients. Store in airtight container. Give mix with the recipe for Hot Cocoa. Yields: 16 cups of mix, enough for 32 servings

 

To Make Hot Cocoa: In a mug, combine 1/2-cup mix with 9 ounces boiling water; stir.

 


 



Allison’s Easy Cookies

1 cake mix (can be any flavor...depending upon what your favorite cookie is!)

1 egg

2 cups whipped topping

 

Mix ingredients together. Spoon onto greased cookie sheet. Bake in a preheated 350-degree oven for 8-10 minutes. Less time for chewy cookies, More time for crunchy cookies. Batter can be kept in the refrigerator for several days.

 

You can have unlimited variations...Lemon cake mix with confectioner’s sugar sprinkled on top, Butter cake mix, Chocolate cake mix with chocolate chips! Butter Cake Mix with White Chocolate Chips and Macadamia Nuts...On and On and On!! Always Perfect!

Sharon’s Peanut Blossom Cookies...

Sharon’s Peanut Blossom Cookies...

 

1 (14 ounce) can sweetened condensed milk

¾ cup creamy peanut butter

1 tsp. Vanilla extract

2 cups Pioneer Buttermilk Biscuit and Baking Mix

1/3 cup sugar

1 (9 ounce) package milk chocolate kisses

 

Stir together sweetened condensed milk, peanut butter, and vanilla. Stir until smooth. Add Biscuit Mix, stirring well. Shape dough into 1-inch balls. Roll in sugar. Place on ungreased baking sheet. Make an indention in the center of each ball with thumb or spoon handle. Bake at 375 degrees for 8-10 minutes. After the cookies cool a little, place unwrapped chocolate kisses in the center of each cookie. For fantastic peanut butter cookies, just leave off the chocolate kisses! THESE ARE GOING TO BE ADDICTIVE!

It is FALL! Ready for a PERFECT Fall Tea??? This is MY pick!

It is FALL! Woohoo! 

 

Ready for a PERFECT Fall Tea? This is my pick! This is one of our family favorites. I make it up in a huge container and just warm it as we want more! It is perfect for taking to parties or get-togethers OR for taking to a shut-in so you can have a tea time on the go. Ready? Here it is:

 


 

Cindy's YUMMY Cranberry Tea...

 

¼ cup instant tea

¼ tsp. ground cloves

1 quart water

1 quart ginger ale

½ cup brown sugar

¼ tsp. ground cinnamon

1 quart cranberry juice

 

Combine sugar, tea, cinnamon, cloves, water, and juices. Heat thoroughly, but do not boil…stirring occasionally. Add ginger ale before

serving.

 

 



Our Always YUMMY North Alabama Chicken Stew!

Our Always YUMMY North Alabama Chicken Stew...

 

Oh! This is another of our family favorites!  I had never had this stew until we moved to North Alabama for Harold to go to college. We adapted QUICK! :) In fact, this has become a family staple. Way too easy! OH! This is the perfect time of year to have a huge batch on a regular basis!!

 

 

1 fresh whole chicken

1 large can Campbell’s Tomato Soup (Yep! It makes a difference in this recipe! Non-brands or other brands make this soup a bit too runny and do not have the same taste as Campbell’s soup.)

Fresh cubed potatoes

2 cans of whole kernel corn

1 bag frozen butter beans

1 can of cream corn

 

Prepare your chicken by boiling in a large soup pot. Save your stock. You will use it in the soup. If you prefer salt, pepper, garlic salt or any other seasoning, add to your stock. Usually

takes about one hour to fully cook your chicken.

 

Allow your chicken and stock to cool. De-bone your chicken and drain out all fat and bones. I usually pour my stock through a drainer several times.

 

Mix stock juice (I use enough to mix with the Tomato Soup so it dilutes the Soup. Then, I add enough to fill my Crock-pot after I have added all ingredients. I leave just enough room for easy stirring and addition of the Creamed Corn.) and can of tomato soup together in cleaned soup pot.

 

Bring to a rolling boil. Add chicken and all vegetables EXCEPT Creamed Corn. I add enough vegetables to make this stew very hardy. If your soup pot or Crock-pot is large, you may have to add more vegetables than I recommended. Just be ready.

 

Make a note on this page if your pot requires any changes! :)

 

Bring to a rolling boil again, watch carefully— this stew has a tendency to burn to the bottom of your pot. Immediately reduce heat to a simmer once it reaches a boil. Cook until vegetables are fully cooked (If I am in a hurry, I cook potatoes while I am cooking chicken. Then they can both be added together

for the stew and cooked quickly!). Once vegetables are all cooked, add can of creamed corn.

 

Warm completely, stirring VERY frequently. Remember that at this point, the stew will thicken and be very likely to burn unless you watch it carefully. I prefer to use the Crock-pot after I have cooked my chicken and added my vegetables. I hardly ever burn this stew when using the Crock-pot, unless I add the Creamed Corn too early.

 

When using the Crock-pot, do not add the Creamed Corn until you are almost ready to serve. Give enough time for the entire soup to warm up with the Creamed Corn added.

 

Serve! Serve with either Saltine crackers or rice or cornbread or alongside a sandwich of your choice (see our Pecan Chicken Salad— makes a great sandwich with this stew!).

 

Note: this soup can also be made in the Crockpot. It will take a bit longer, but it is still yummy!

Today is the PERFECT Day for SOUP! Try our Easy Homemade Chicken Noodle Soup!

Way TOO EASY and YUMMY Chicken Noodle Soup…

 

One of our family favorites! This time of year begs for this to be part of the aroma of our home! Give it a try...you are SURE to love it!

 

 

1 whole chicken

1 large can Cream of Chicken Soup

One bag of Egg Noodles

 

 

Prepare your chicken by boiling in a large soup pot. Save your stock. You will use it in the soup. If you prefer salt, pepper, garlic salt or any other seasoning, add to your stock. Usually

takes about one hour to fully cook your chicken.

 

Allow your chicken and stock to cool. De-bone your chicken and drain out all fat and bones. I usually pour my stock through a drainer several times.

 

Mix stock juice and can of Cream of Chicken Soup together in cleaned soup pot. Bring to a rolling boil. Add chicken. Bring to a rolling boil again. Add noodles to your preference—we

add LOTS! Bring back to a boil. Reduce heat to a simmer. Cook until noodles are fully cooked. Serve!

 

Note: this soup can also be made in the Crock-pot. It will take a bit longer, but it is still yummy! Definitely EASY to make!
