Rich and Creamy Homemade Hot Cocoa

I came up with this recipe when I wanted some hot cocoa but ran out of mix. My kids and husband love it. It is very rich and chocolate-y. Try it once and tweak it to your own taste. If it is too rich, dilute with some more milk. Too sweet? Decrease sugar. Too chocolate-y. Reduce cocoa powder. I run this through my blender because it blends the cocoa powder and sugar in so that it is creamy. Otherwise cocoa powder has more of a gritty mouth feel. Unavoidable to some extent but using the blender helps tremendously.

 

This makes 4 nice sized mugs of hot cocoa. We like to top with mini marshmallows AND whipped cream. The cocoa itself is very lowfat- so feel free to leave off the toppings to keep calories down.

 

Amy's Rich & Creamy Hot Cocoa

 

into blender:

 

32 ounces milk

1/2 cup sugar (1/3 cup will make it taste like dark chocolate mmm!)

1/2 cup powdered milk

1/2 cup cocoa

 

Blend for about 1 to 2 minutes on high. Pour into 4 mugs. Heat in microwave for about 1 minute each mug. Remove mug and stir and check temp. If you want it hotter after stirring, nuke for 30 more seconds. That should do it! You can heat this on the stove too. Just pour in small saucepan and heat over low heat for a little bit, stirring almost constantly. Too long in the microwave or too high heat or too long on the stove could cause the milk to curdle- so just watch it.

 

*Psssst....this also is delicious as a creamy chocolate milk. When made in the blender, this becomes thick and creamy like the kind you buy at the store but without all the calories and unpronouncable extras. A very good kid friendly treat!

Fish Tacos

Here is my recipe for Fish Tacos. They really are quite delicious! They are not expensive to make at all! When we first had them the ingredients kinda grossed us out. Cabbage...fish...tacos...no cheese???? And on a soft corn tortilla? With lots of cilantro with some kinda of spicy white sauce? Well, let me tell ya...it will not disappoint. I had to make these up after having some at Del Taco and did my own thang. I think I did preTTy good! We are nuts about cilantro and use tons. But feel free to adjust that to your family's taste! Very budget friendly recipe for a big and small families!

We like to eat ours served with grilled zucchini and in season fruit. =0) Enjoy!

You Will Need:

The Taco-

Frozen Fish Sticks (I find the generics actually work best for this)- you will need 3 fish sticks per taco

White Corn Tortillas (white is best, the soft kind, not yellow corn- don't use flour tortillas - I buy corn tortillas in packs of 50, very inexpensive)

Cabbage, very finely shredded- usually less than $1 a head

Tomatoes, chopped into small cubes (in season cheap! If not in season skip!)

The Sauce-

1/2 cup yogurt

1/2 cup mayo

1 tablespoon lime juice (or less or more, a preference here)

1/2 tsp dried oregano

1/2 tsp cumin

1/2 tsp dill weed

*cayenne pepper, to taste. We use about 1/8 of a tsp. If you like heat go crazy!

fresh cilantro, as much as you like, finely minced. We use an entire bunch (just the leaves) One bunch is about 33 cents!

Directions:

1. Bake the fish sticks per package directions. Make in 3's, as you will place 3 sticks in one taco.

2. Oh so finely, shred the cabbage--do not, please, do not use lettuce. Must be cabbage--try it, you'll like it! And chop tomatoes, if using.

3. Warm up however many tortillas you'll need--you can use 1 or 2 per taco, up to you. Keep them warm in the microwave covered by a damp cloth.

4. Mix all sauce ingredients. Set aside.

5. Assemble! To each tortilla add 3 fish sticks, drizzle about 1 tablespoon (eyeball it) of sauce on, top with cabbage then tomatoes (omit tomatoes if you like but NOT the cabbage!).

That's it! The only after prep clean up I have to do is the chopping board, the knife and the pan from the fish sticks. The kitchen stays nice n cool!
