Menu Plan Monday

My splurge of the week was swiss cheese. And that won’t be happening again any time soon. Hot dog. I never noticed that it can run almost twice as much as cheddar or mozz! The price of milk has gone up. Ouch. We’ll be drinking less and rely more on the powder milk that I add to baked goods. And I know it seems like we eat salmon a lot but …hehe…everytime I plan on making it something comes up and we end up eating eggs or something. So I really hope we get to it this week! I found a ham, a real ham shank or something like that in my deep freeze. Ummm…it was labeled 2005. Don’t worry it was wrapped realllly well. But I figured it was time to break that baby out. Whatever is left from Monday and Wednesday, I will cube and freeze for something later.
 
We have a few medical bills that we are hard pressed to pay off. My menus over the coming months will reflect this. Sorry if they get too boring! LOL But a mom’s gotta do what she’s gotta do get those bills paid down! And I’ll likely be eating more boxed Mac & Cheese than I’d like- one of the few processed/convenience foods I buy. But hey, at least it’s one item my kids and dh will absolutely scarf down. And breakfast items will become a dinner train passenger as well. But to make things healthier, I’ll be working lots of whole grains into the pancakes, waffles and French toast we’ll be eating with plenty fresh fruit.

Monday- Ham, Mashed Potatoes with Sour Cream & Butter, Green Beans with Basil
Tuesday – Salmon, Rice Pilaf, Steamed Veggie Mix with Herbs
Wednesday- Ham and Cheese Potato Salad, Green Salad, Cantaloupe (the potato salad recipe will be scaled for 8 servings)
Thursday- French Toast, Turkey Bacon, Strawberry Banana Yogurt Smoothies
Friday- Homemade Pizza
Saturday- Family over for Dinner- Pancakes, Eggs, Bacon, Fruit Salad, OJ
Sunday- Taco/Nacho/Burritos…this is lunch and dinner. We can pick what we each want to do with the toppings at each meal.

My Recipe for French Toast: 1 loaf of day old firm bread, sliced about 1 inch thick. (I use my own homemade bread.)  8 eggs + 1/2 cup french vanilla creamer OR 1/2 cup milk and 1 tsp vanilla + 1 TB cinnamon. Mix eggs, creamer and cinnamon together. Dip bread slices into mixture and cook until lightly brown on each side. We serve with syrup or powdered sugar. My husband and I use creamer in our coffee and one day my 5 year old and I were experimenting and decided to add some of our creamer. Mmmmm! French toast by whatever method you use should be almost custard like in the middle, so be sure to use a firm bread! Soft breads will just flatten. (Which is totally ok- I grew up on the flat kind and still ate it up!)

I enjoy hearing how you save. I haveadopted a few ideas myself. If anything, it is inspiring. Get's me thinking where can cut costs.
Keep it up.It matters!
So what are you doing for school stuff? Do you have a plan for your curriculum purchases?

Hello! Great menu for the week. I can very much relate to you. The price of milk (& gas & everything else going up!) makes our food budget a little tighter, too. But breakfast for dinner is a great meal! We also fall back on rice and beans a lot. Like you said, a mom has to do what a mom has to do! ;)
I'll say a prayer for you that those med bills resolve quickly. Have a great week!

I've been reading your menu's for a couple of weeks now (linked from Laura's) and I really enjoy them! I'm not good at pricing things at all and have found the tips on your website really useful. My goal is to cut my grocery bill in half by the end of the year. So, thanks for posting! I love your ideas.
