Menu Plan Monday!

Well hello there! Long time no post! he he

My oldest just turned 6, this has been a hectic week to say the least. He requested an Earth cake. I made said cake. Said cake was very hard for me. It was not the most accurate Earth ever depicted, but Cpt Science (newly turned 6 year old) loved it! That was the most important thing! Instead of doing a pinata, or gift boxes or games we opted to get some real Astronaut Food. We tried a beef dinner (umm honestly the beef stew wasn't exactly dog food tasting, slightly better) and the ice cream which craziness aside tasted JUST like ice cream! (well it was ice cream just freeze dried lol) Good times!

Monday- Slow Cooker BBQ Chicken, Deep Fried Mushrooms, Raw Broccoli/Carrots/Cherry Tomatoes

Tuesday- Slow Cooker Beef Stew, Fluffy Biscuits, Green Salad

Wednesday- Slow Cooker Chili Dog Chili, Corn Bread, Green Beans

Thursday- Those Potatoes (recipe below), choice leftover biscuits or corn bread, Steamed Cauliflower/Broccoli Mix

Friday- Homemade Pizza

Saturday- Thanksgiving with family (yes early)

Sunday- Mama spends the day with a friend (super duper treat!) and Dad and kids eat mac and cheese!

Those Potatoes

  • 6 potatoes (boiled, skinned and cubed)
  • 2 cups shredded cheddar
  • 1/4 cup butter, melted
  • 2 cups sour cream
  • salt&pepper to taste

<> In a large bowl mix cooked & cubed potatoes, cheese, butter, sour cream and salt and pepper to taste. Place in greased casserole dish (I use 11X9). Optional (but it totally makes this dish!) top 2 cups crushed corn flakes & 2 TB melted butter OR 2 cups crushed plain potato chips. Bake at 350 for 40 minutes or until hot all the way through and top is golden.

<> You can lighten this by using light ingredients. This is straight up good ole fashion comfort food! mmmm Mmmmm MMM.

Those potatoes sound yummy. And this week I need to use potatoes. Our church got 3,000 POUNDS of potatoes donated to us, so I have about 60 pounds of potatoes to get used up or put up somehow. Guess what side dish we'll be having every meal? ha! At least they are red potatoes, my favorite!

I hope the time management issues are starting to resolve. That can be difficult and I really understand. I'll pray for you and your dh.

How cool to get real astronaut food! Just for the experience, not for the culinary aspect! Always appreciate your menus. I really, really want to bake more but just never seem to get a chance. Bummer!
