I've had a great day puttering in the garden and kitchen today.
I cleaned out my inside freezer and threw out a bunch of yucky frozen bagels, bread crusts, etc. I found wheat bulgar and pine nuts when inspiration struck!
Out to the garden to cut back my purple and green basil to add to the pine nuts, along with some garlic, EVOO, Salt and Parmesan cheese for PESTO. I keep it in a glass jar and pour a layer of EVOO over the top before placing the lid on. This keeps the pesto from browning, or oxydizing. When I use it, a spoonful or two at a time, I'll smooth out the top and make sure another layer of EVOO floats to
protect it.
The wheat bulgar sat soaking on my counter while I went to the side garden to pull up some mint and cut some parsley for TABOULEH. I added lemon juice, EVOO, S&P, Cumin, green onions, tomato, and tons of chopped up mint and parsley. This will last all weekend. My favorite way to serve it is with large Romaine leaves, and matchstick cucumbers.
The next plan of attack was to make zucchini muffins, but I'm totally out of sugar. None in the whole house! I don't want to get dressed to go out to the store, so they'll have to wait until tomorrow.
