Eggs in a Basket

Here is a quick and hearty breakfast/snack/lunch and sometimes if you are rushed, why not dinner?
First you collect your ingredients and tools. A griddle or skillet, a cup, touch of butter, eggs, and a spatula.
Here are our first ingredients....displayed by our children with bed head. :)

Then you use the cup to make a circle inside the bread.

We then put the bread onto the griddle with a tiny dab of butter. I used Smart Balance Spread with all those Omega goodies.

Gets warmed up and in goes one egg...do yourself a favor and buy Organic or just really good eggs. Eggs are such nutritious little things.

Turn it over a time or two, depending on whether you like the yolk runny or not. I do, I like to dip the missing circle in it. :)

We poured a little bit of maple syrup on it...but you can also add honey.

Hope we gave someone a good idea on a new breakfast. Serve with a big cup of Orange Juice- YUMMY.

I've made those lots of times but never thought to put syrup on them. Definately going to try that. My kids will love it.

I do something very similar every once in a while for breakfast. I hard cook the eggs (so they aren't runny - my kids don't like them runny, I do) and I toast some bread. When the eggs are done, they get put on top of the toast - wha-la - yummy breakfast. My kids call it "Eggs on toast" Not too orginial, but it works :)

That is a great idea D! I would try it tomorrow with Joshua if we weren't out of bread. I will have to get to the store tomorrow for sure though because I know he will love it.

we call this eggs in a nest.
just this week my son asked me why i never make it anymore...no reason. i just forget.
and we have never put syrup on...that's awesome.

Except we call it a "Bulls-eye" which came from my hubby's family. Anyway, never tried it with syrup - will do that tomorrow!

but we call them 'egg in the middles'!
We use lots of black pepper and eat them with our hands.
Easy meal and no dishes to wash!
