Banana Pudding - Yummy!

With all the bananas around here we just had to have banana pudding for dessert.

Without vanilla wafers and a box of French vanilla pudding what’s a girl to do? I was off to the local shops where I chose some cookies that I hoped would work. I had never made pudding from scratch before, armed with a basic recipe from a homeschool friend- we were off on the challenge.

…we will never go back to packaged now that I know how simple it is to make and how rich and creamy our homemade version was!! (I'll have to give chocolate pudding a go soon)
It was delish!

The recipe called for three egg yolks- not wanting to waste the whites we made a meringue and then toasted a little coconut to top it all off.

You can get everything where you are too. Easy Peasy!
I sliced up about 5 bananas. Crushed about 2/3 a package of vanilla cream filled cookies. Put ½ crumbs on bottom of pie plate, topped with half the banana slices.
To Make Pudding:
Whisk together Ύ cups sugar with Ό cup flour in a sauce pan. Stir in 1 cup milk. Beat 3 egg yolks and whisk into the sugar mixture till smooth then add in 1 more cup of milk and 2 teaspoons butter. Wisk over low heat stirring constantly until pudding thickens. Remove from heat and stir in 1 tablespoon vanilla.
Pour half of pudding mixture over bananas and do another layer.
I had those egg whites so we beat them until stiff with Ό cup sugar and ½ tsp vanilla and spread it over the top. Sprinkled toasted coconut on the top and tossed it in the oven to brown the meringue. (to toast coconut: layer of coconut on cookie sheet for about 10 minutes at 325- stirring often and watching, remove when golden brown.)
Let cool and then chill.
Yum!

I agree I don't like using the instant or boxed stuff for banana pudding!!
