Happy Birthday mom. Thanks for all you do for us and the way that you love us!

Sure do wish you were here to enjoy the chocolate chip oatmeal cake that we are enjoying for your birthday.

Sometimes it is hard being so far away.

Lentil Cheese Savory

Combine and simmer in a covered saucepan for 15 minutes:

1 cup lentils

2 ¼ cups cold water

Add and simmer 30 minutes more:

½ teaspoon salt

2 cups chopped tomatoes or 1 cup sauce

Fry separately:

¼ cup margarine

1 large onion, sliced

to fried onions add:

1 cup grated cheese

lentil mixture

Place in a greased 9X9 pan and bake @ 350 for 20 minutes

(I add a ½ cup bread cubes or tortilla crumbs- so you could add some type of bread or tortilla chips (corn?) that you can have.)
