Favorite Zucchini Recipes?

I confess I've never grown zucchini, although we are occasionally given some.  We were given 3 last week, and they shredded up to make 15 cups of shredded zucchini ... most of which I froze.

Yesterday  I made chocolate zucchini bread.  And I have a  zucchini  brownie recipe I want to try.  But what I really want is to find a devil's food cake recipe using zucchini.  I remember eating a really rich dark chocolate  zucchini cake at church potlucks as a teen in Maryland.  I loved it!!  The best I can think to describe it as is Zucchini Devil's Food Cake.  Does anyone have a recipe like that?

Here are the two recipes I have, but I'd love to try others.  Please share if you have a favorite.

Chocolate Zucchini or Pumpkin Bread

3 cups shredded zucchini  OR 1 can (15 oz) pumpkin
1 2/3 cup sugar
2/3 cup vegetable oil
2 tsp. vanilla
4 eggs
3 cups all-purpose flour OR whole wheat flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1/4 cup cocoa
optional 1/2 cup chopped nuts or chocolate chips

Heat oven to 350* and grease bottoms only of 2 loaf pans.  Mix zucchini/pumpkin, sugar, oil, vanilla and eggs together.  Stir in remaining ingredients.  Pour into pans.  Bake 50-60 minutes or until wooden pick inserted in center comes out clean.  Cool 10 minutes. Loosen sides of loaves, remove from pans.  Cool completely before slicing.  Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.


Chocolate Zucchini Brownies


2 cups grated zucchini
1 1/2 cups sugar
2  cups flour
1 tsp. salt
1.5 tsp. baking soda
1/3-1/2 cup cocoa
1/2 cup oil
2 tsp. vanilla
1/2-3/4 cup chopped nuts or chocolate chips (optional)

Preheat oven to 350*.  Mix all ingredients together and  pour into a greased 9x13 pan.  Bake 30-35 minutes.

Hello, I'm thinking of making a zucchini cookbook. Just a little booklet with all our zuc recipies in it. As for the cake, I"ll look over my recipe and see if it's a cake or bread. I thought it was a cake but I'm not sure. I haven't made it in a couple years.
This brownie recipe looks wonderful too.
Have you ever made the coconut zucchini pie? Yummy!

I like it when it's been lightly cooked on the grill

And I like it raw in salads, julienne in asian salads ....

I don't usually do the sweet bready/cakey route

I was thinking sauteed might be good next time we get zucchini. I was also teasing the children that I'd make zucchini pizzas for them and bake slices with sauce and cheese on top. I bet that would be good, but they wouldn't like it.

I just picked a zuchini and chopped it up and added it to my broccoli cheese soup tonight... but I was thinking about posting about zuchini and one of my favorite recipes made with it, my mom's mock apple cobbler... I'll have to dig it out... and I hope to get a chance to try your recipes, I'll be printing those off to add to my recipe collection!
I wish our heat wave would pass so I could get baking... I'm even hesitating running the oven to make the biscuits to go with the soup tonight... ugh...

Jul. 30, 2006 - Another way we like it is sauted

I like to slice it and cook it with onions and garlic in oil until it is well cooked and soft. Then I add a little soy sauce and serve. Everyone likes it in my family this way and it is really easy.
I have also tried it with Parm. cheese rather than the soy sauce, although I like the latter better.
