I just wanted to share with you that you should take time and enjoy a new cup of tea. I found a wonderful one at London Apothacary, you can find her at ETSY.com. Hmmmm is is so warm and fragrant, it is called Winter Wonderland. Very appropriate, as today we receive 3 inches of diamond glistening snow. It has left our hill covered with podwer sugar, truly a winter wonderland. God is so creative, I think HE is showing off a little today, makes me smile in wonder!

• Jan. 27, 2009 - Simple Cobbler to warm you!

Greetings
I hope you are staying warm if you are in the cold zones....brrrr... it is cold here in Missouri.
We have a light dusting of snow and perhaps more on the way! Pretty but cold!
I would like to share a simple easy cobbler recipe.
I made ours cherry to be cheery ;0)!
1 can of your favorite pie filling
Spray a 9x9 inch pan with oil spray
Pour filling in the pan
1/3 cup of a sugar cookie ready made mix (dry)
Add to 1 cup of quick oatmeal
Mix the cookie mix with the oatmeal as a topping
Sprinkle evenly over top of filling
1/4 cup canola oil is then sprinkled over top of the dry mix
Bake at 350 for 20-25 min.
Serve warm and it is yummy!

• Apr. 14, 2007 - A very good alternative recipe for CHEESE...no milk..

Soft Cheese Recipe (non-milk)
Here is the cheese recipe I promised to write out for you. This is the one I use on pizzas and it is so economical and delicious! There is NO MILK in this recipe!
I cup unsalted cashew pieces
1 cup water
1 cup of firm tofu (organic nonGMO)
2 T of nutritional yeast flakes
1 t salt
1 T apple cider vinegar or lemon juice
Place all of this in the blender and blend till smooth. Store in a glass quart jar in the refrigerator till needed. When putting this on a pizza the trick it to put about 1/2 to 3/4 cup of the cheese in a plastic bag. Hold the bag closed like you are going to decorate a cake and snip a TINY bit of the corner off. Now just drizzle the cheese across the top of your pizza. Bake as you usually would your pizza and no one will even know this is not mozzerella cheese.
To make a orange colored cheese.....just added 1/2 of a roasted red bell pepper and whiz with the cheese mixture. This will taste some what like pimento cheese, it is great to use on top of the pizza too. I like to use some of the white and then prepare another baggie with a little of the orange cheese, this looks very pretty and it taste GOOD TOO! This orange soft cheese makes a wonderful sauce for your noodles or to use over steamed veggies.

Daddy Is Driving
While a man and his family were in Europe, there was a time when they needed to drive three days continuously, day and night, to get to Germany. So, they all got into the car -- he, his wife, and his 3-year-old daughter.
The little girl had never traveled at night before and, with deep darkness all around, she was frightened the first night in the car.
"Where are we going, Daddy?"
"To your Uncle's house, in Germany."
"Have you been to his house before?"
"No."
"Then, how do you know the way?"
"Maybe, we can read the map."
[Short pause] "Do you know how to read the map?"
"Yes, we will get there safely."
[Another pause] "Where are we going to eat if we get hungry on the way?"
"We will stop at restaurants."
"Do you know if there are restaurants on the way?"
"Yes, there are."
"Do you know where?"
"No, but we will be able to find some."
The same dialogue repeated a few times within the first night, and also the second night.
But on the third night, the little girl was quiet.
Her mother thought that she might have fallen asleep, but looking back, saw that she was awake and calmly looking around. They couldn't help wondering why she had stopped asking questions.
"Dear, do you know where we are going?" the mother asked.
"Germany, Uncle's house."
"Do you know how we are getting there?"
"No."
"Then why aren't you asking anymore?"
"Because Daddy is driving."
Because Daddy is driving. This answer from a 3-year-old girl has then become the strength and help for the many years to follow whenever there are questions and fears on this journey with the Lord.
Yes, our Father is driving.
We may know the destination (and sometimes we may just know it like the little girl -- "Germany" -- without understanding where or what it really is). We do not know the way, we do not know how to read the map, we do not know if we can find restaurants along the way.
But the little girl knew the most important thing -- Daddy is driving -- and so she is safe and secure. She knows that her Daddy will provide all that she needs.
Do you know your Daddy, the Great Shepherd, is driving today? What are your behavior and response as a passenger, His child?
You may have asked many questions before, but can you, like the little girl, start to realize the most important focus should be "Daddy is driving?"

Now, I didn't mean to intimidate anybody with the numbers I put up in my last post about how much you would really need to plant to feed your family. Actually, I want to inspire you! When I think about those numbers, I am challenged to try again this year to become self-sufficient in at least one thing from the garden. I know it's not realisitic to think that every single crop I plant is going to grow perfectly or go as far as I thought it would.
For example, I got a bumper crop of pumpkins last fall. I thought for sure I would have enough pumpkin to last until the following fall harvest and, actually, I did. BUT, I decided to be very clever and overwinter them in my nice warm greenhouse (because pumpkins like to stay dry and warm, they keep better). The local raccoon population thought it was awfully clever of me as well and they enjoyed chewing holes in every one of the pumpkins I had not yet used! It didn't even occur to me that any varmints would get in there and eat my pumpkins!
So, there you go. You never know what will happen. So, set the goal for yourself this year of just picking one thing that you would like to try and grow enough of to get through to the next year. Think about a fruit or veggie that your family likes to eat a LOT. It could be spinach or strawberries or carrots. Whatever it is, put a lot of effort into learning about and growing that one particular crop. Believe me, you will have such a feeling of accomplishment just knowing that that is at least one thing you will not have to purchase at the market throughout the coming year.
