If you like Oriental and want something
easy, try this recipe! I've changed it a bit for people, like me, who
want to cut their fat and sodium. If you don't have that problem, then
just substitute the real thing!
Chicken Chow Mein
4 chicken breasts, sliced for chow mein
1 small onion, chopped
1-1/2 cup chopped celery
1 cup low-sodium chicken broth
1 tablespoon sugar
1/3 cup lower-sodium soy sauce
1/2 teaspoon ginger (fresh grated is even better)
1 clove garlic, minced
1 can bean spouts (rinse - it helps reduce the salt)
1 can water chestnut (rinse - it helps reduce the salt)
Cooked rice
Chinese noodles
Brown chicken in oil. Place in bottom of crock pot. Add remaining
ingredients. Cool low for six hours. Serve with rice and top with
chinese noodles. (I have discovered that the wide noodles are less salt
than the skinny ones!)
NOTE: If you want the sauce to be thicker, add a mixture of 1/4 cup cornstarch and 1/3 cup water and cook until thickened.
How easy is that!
