I love acorn squash, but I don't like
fixing it. The microwave just doesn't cook it as well as I like and I
hate to heat up my big oven just to cook one squash (only two of us!).
So, today I put an acorn squash in my crock pot. I first cut it in
half. Then I put 1 Tablespoon of brown sugar and 1 tsp of butter in
each half. Covered the pot and cooked for about 5 hours. Yumm! I'm
eating it now and loving this delicious way to get Vitamin A!
