Weight Loss Journey

2 Corinthians 5:17 "Therefore if any man is in Christ, he is a new creature; the old things passed away; behold, new things have come."
I am coming to the conclusion that my body losses weight about every ten days. I did not loose this week when I went to weight in. I had on heavy jeans though. But this morning when I weighed at home I was down.
Being sick, I have been drinking a lot of water. Today is the first day I finally feel a little better. I haven't walked. I need someone to give me a huge nudge. I can't wait to be able to get outside and walk.
So I'm going to keep on keepin on. I love eating healthier. Today I made some little pizza's using whole wheat tortillas for crust and turkey pepperoni.
The whole wheat tortillas I used where Mission Foods Low Carb Whole Wheat Fajita size. Here is a great recipe from Mission Foods.
Ensenada Fish Tacos
Serves 6

6 Mission® Soft Taco Size Flour Tortillas (I'll use the Whole Wheat version)
1 pkg. (1 oz.) Lawry's® Chicken Taco Spices and Seasonings divided
1/2 cup Sour Cream (lite or fat free)
2-3 Tbsp. Milk
1 Tbsp. Lime Juice
16 oz. Cod or Tilipia Fish Filet
2 Tbsps. Oil
sliced Cabbage
Garnishes: Lime Wedges, Black Olives, Salsa, chopped fresh Cilantro, shredded Cheese |
Recipe Instructions:
- Sauce: combine 2 teaspoons chicken taco spices with sour cream and enough milk to thin to pouring consistency; set aside.
- Seasoning paste: combine remaining seasonings, oil, and lime juice. Brush seasoning paste over entire fish.
- Grill or broil until fish begins to flake easily, about 10 to 12 minutes. Evenly divide fish among tortillas, top with cabbage and sauce, fold, and serve with lime wedges and garnishes.

I understand losing weight! I think since I've been losing and finding it since I was 13 I should offically call weight management my hobby! When you mentioned weighing in I remember that I always wore the exact same thing each week when I went to weigh! I think that must mean something about me but lets not probe it and find out. Let me encourage you that it can be lost....you go girl. J

I am on my own weight loss journey. To be honest, I haven't made much progress with the scale. I am working on my motivation. The amount I need to lose is overwhelming to me, but with God all things are possible, right? Please keep sharing your recipes and sucesses. You are an encouragement to me. :o)

Thanks for the belated birthday wishes! :-) I also noticed that you and your hubby recently celebrated your anniversary, which is perhaps one of the most precious milestones to celebrate, so Happy Belated Anniversary to the both of you! Beautiful wedding picture, by the way! Thank you, too, for your words of encouragement. Even though I often don't feel like such a great mom, it was still good to hear. And you're right -- those memories are precious, and while this stage is often rough, it has many wonderful aspects as well, and they won't be this small and sweet forever.
Now, concerning YOUR blog entry.... I, like the ones who came before me, can relate to the weight struggles. I enjoy exercising and healthy eating immensely, but isn't it always easier to choose the unhealthy option? It takes more mental and physical effort to get up and get moving. Eating healthy is also more of an effort. It seems that every quick snack out there is bad for you. I have been having an especially tough time with the whole weight/health thing. Want an accountability partner for this venture? I know I do! :-)
