Food Friday: Scrumptious Chocolate Chip Cookies
This is my first "Food Friday", and I have a delicious cookie recipe in store for you!
Best-Ever Chocolate Chip Cookies
1 cup sugar 1 1/2 tsp. vanilla
1 cup brown sugar 3 cups flower
1 cup butter, softened (no subs) 1 tsp. salt
2 eggs 1 tsp. baking soda
12 oz. chocolate chips
Set oven racks to second and fourth positions or one level down from the top and one level up from the bottom. Heat oven to 375 degrees. Do NOT double the recipe unless you have a 6 qt. KitchenAid mixer or something that can handle at least 6 cups of flour in addition to the other ingredients. (We learned this the hard way. *giggle*
You should've seen the flour flying through the kitchen! So, lesson learned, if we want to make a double batch we either buy a new mixer or make the first batch and bake it and then make a second batch and bake it.)
Mix sugars, softened butter (no subs), eggs, and vanilla together. Mix flour, salt, and baking soda together and add to butter-sugar mixture. Add chocolate chips. Drop by large tablespoonfuls onto baking sheet greased lightly with cooking spray. Bake for 5 minutes. Switch pans on oven racks and rotate them. Bake for an additional 5 minutes, or until just barely golden brown. Remove cookies from oven and let set on cookie sheets for 2-3 minutes or until they can be easily removed and placed onto a cooling rack or plate to cool. Enjoy!
Variation: To make Triple Chocolate Chip Cookies, decrease flour to 2 1/2 cups and add 1/2 cup baking cocoa.
Variation: To make Chocolate Peanut Butter Chip Cookies, decrease flour to 2 1/2 cups and add 1/2 cup baking cocoa. Add peanut butter chips to dough instead of chocolate chips.
