Frozen Grilled Cheese Sandwiches!
To save cooking time and not have extra pans to wash, I cook dozens of grilled cheese sandwiches at a time and freeze them. Sometime up to three loaves at a time.
To make sandwiches in bulk you don't even need to melt the cheese.
Grill the bread as you normally would but don't add the cheese yet. After you have all of the bread cooked, assemble the sandwiches and put waxed paper between them. All of the sandwiches can go back into the loaf bag and straight into the freezer.
When you need a quick lunch, remove a few sandwiches from the bag and pop them into the microwave until the cheese is melted. In less that a minute per sandwich, lunch is served.

Wow! I wouldn't have thought of that, either. Though with "only one" you would think I woul have all the time in the world, but with my dh's unit ministry, etc., etc., there are days I would love to forego the standard PB&J. Now I can!
