Canned soups are high in salt, hydrogenated oils, preservatives, and all kinds of interesting ingredients. For a healthier alternative, when a recipe calls for a cream soup, you can easily substitute your own. You basically want to make a white sauce. Use
3 tbs. flour
3 tbs. butter (I usually leave this out and no one notices)
1 C milk
1/4 tsp. salt
Stir and heat until thickened.
For Cream of Mushroom, add mushrooms.
Cream of Chicken, substitute 1/2 of the milk with 1/2 c chicken broth and add shredded chicken.
Cream of Celery, add chopped celery , or I usually add 1/4 tsp. celery salt.
If it's a recipe that I don't care if it has mushrooms, I will just use the basic sauce and leave them out. I also try to keep some boiled chicken and broth in the freezer ready to use. This makes it easy and fast.
