Italian Chicken – A For-Sure Recipe, Easy, Too

 

 

   

When I tried my new recipe Saturday night at the lake (Oriental Chicken), I wasn’t sure if everyone would like it.  What if it turned out disastrous and no one wanted to touch it?  So, like I often do when I try new recipes, whether it is fish, meat, or chicken, I gave choices.  With eight people to serve for dinner, I used two packages of skinless, boneless chicken (3 per package).  On one skillet, I had the Oriental Chicken cooking, and in the other, I did the following: 

Antoinette's Italian Chicken

Brown chicken in olive oil, season with Good Seasons Italian Dressing (I always stock my cabinets with this – it’s great in spaghetti or lasagna sauce.)

 

Pour Italian Fat Free Salad Dressing over the chicken (approx. 1/4th the bottle – maybe one cup?)

 

Simmer in this dressing until the chicken is cooked through.

 

Transfer to broiler pan – slice some onions (and green pepper if you have it) and throw it on to the pan, too.

 

Broil until it looks done – lightly browned.

 

I served with this meal:

A plate full of potatoes that I had put in the microwave for about 20 minutes.  When they were done, I cut them in quarters, sprinkled them with salt and pepper.

Fresh tomatoes, sliced.

A dish of chicken rice-a-roni

Yoder’s Amish peaches (everyone loves these – I only wished I’d had cottage cheese to serve.)

 

 My husband loved the Oriental Chicken best; Rachel liked the Italian Chicken best.  It was a win-win.  However, there was some Italian Chicken left on the platter – so I froze what was left and will use it in a future recipe.

Thanks for stopping by at my blog to say "hi". I have not been spending all my time looking at beautiful Mt. St. Helens, but I do love to gaze at her from time to time - when she's not covered in gray clouds, that is.

It has been an exceptionally cool and wet Spring for us. We had a few days in the 80's in May, but it was a fluke, really. Our Summer around here usually doesn't start until after the 4th of July.

Your chicken recipe sounds very appealing. I like that it can be prepared quickly and without a lot of time spent in the kitchen. Thanks for sharing it. I hope to give it a try. Do you season the chicken with the packaged mix of Good Seasons, or do you use the bottled dressing, or both?

I seasoned the chicken with both the packaged mix of Italian seasonings (but not the entire package) when I browned the chicken (instead of using salt and pepper). Then, I used the bottled Italian dressing to simmer the chicken in.

Thanks for the clarification on the kind(s) of dressings to use for your chicken dish. I really enjoy cooking - especially when the recipes are quick, easy and most of all, yummy!
Yes, we are headed to the county fair once again this year. In a short week and a half from now, the girls will show the horses in what is called pre-fair. It is a "dress rehearsal" of sorts for the real thing which takes place in August. Now if we can just get some dry weather around here, things will be better. When my younger daughter and I went out to feed the horses this morning, we noticed that our gelding was missing one, maybe two of his shoes - we just had him shod 4 days ago! It has been such a cool, wet and muddy winter (and now spring) that the horses hooves have not had much of a chance to dry out. Therefore, when the farrier shoes them, we are lucky to have the shoes stay put until their next shoeing. So I must add calling the farrier to my "to-do" list for today. Things are looking up weather-wise toward the end of the week, however. It is actually supposed to get up into the 70's - and we all say "halleluia"!
