Making Lists (and A Good Dinner for Tonight)

 

 

  

 

This weekend I have:

 

Sat outside and listened to the waves hitting the beach.

Watched my children swim in the lake and play on the sand.

Ate a simple lunch of whole wheat pasta with garlic marina sauce – outside, with my seventeen year old daughter, enjoying her company and conversation.

Felt the gentle breeze and soaked in the sunshine.

Heard the sound of motor boats and watched the sail boats gliding by.

Looked through a favorite cookbook of mine called, Celebrate Virginia, making notes of recipes I want to try this summer.

Rocked my grandbaby, Kayla, on the lakeshore.

Played with my ten year old daughter, Ruthie, in the water.

After listing all of the above, I need not tell you that my weekend was delightful in every aspect.  One of my favorite things about being at the lake, is sitting on our wicker furniture juxtaposed directly next to the sandy beach.  I watch the children build sandcastles, and at the same time, I leisurely look through magazines I haven't had time to touch, peruse cookbooks, and make lists of things I want or need to do in the near future.   This past weekend, I I kept a little notebook on the wicker end table beside me, taking notes of all kinds of things that occurred to me while resting.  I made lists:

Herbs I want to grow.

Recipes I want to try and where to find it (what cookbook or magazine.)

I worked on making a menu for this coming week taking into account on which days I have appointments.  When I thought through the upcoming week, I could see that I have only one night for a dinner that could be time consuming.  Every other night of the week calls for sandwiches and soup.  With this in mind, and the desire to try the recipes I had marked, I have a wonderful Monday evening dinner planned – complete with Sweet Potato Casserole; Yummy Corn Casserole; and a delicious dessert – Banana Coconut Cream Pie.

 

 

I have a lot of excess eggs in my refrigerator, so when looking through my cookbook, anything that used 4 or more eggs, was of interest to me.  I am in the mood to spend all day Monday experimenting new recipes using eggs.  When one has so much excess of eggs, it gives you the feeling of freedom to experiment.  Mind you, I am not known to being a “baker” in the kitchen.  I like to cook, but desserts have never been my specialty.  I think I may very surprise everyone! 

Recipes I want to try tonight (using my egg excess):

Coconut Cream Pie (5 eggs)

Custard (4 eggs AND goat’s milk – another item I have plenty of!)

 

Bread Pudding (6 eggs and half and half (which I have an entire unopened quart of)

.

I keep my laptop by me along with my glasses, camera, herbal ice tea, lip sunblock, and flowers my little eight year old boy, Jacob, brought to me.

I even made lists of blogs I'd like to post.  I came up with lots of new ideas and I now have lots of posts to keep me busy.  But if I'm going to try all those new recipes I promised myself, I'd better quit now and get cooking!

Thanks for dropping by this morning - I was over here this morning too - thinking of you and got about 3/4ths of this post read and then was pulled way with a busy morning. It's just been one of those mornings - Jeff is leaving for Switzerland tonight on business (will be gone for 6 days) so we met him for lunch at our favorite Asian restaurant and to say good-bye (he will leave right from the office). But before we left, I was going to wash some clothes, got everything sorted and the sheets in the machine, only to find my terminally ill washer was now deceased - it didn't even make a sound - zilch. So now I have to take all that to the laundromat (which I dread - I think the same clientele that go to Chuck E. Cheese also use the laundromat, lol). But the girls have never been to a laundromat before so it should be educational and I can write it off, right? So then the girls wanted to squeeze in a little horsey time before we left too - so I drop everything and off we headed to the barn. The horses and the girls are making such great progess - Amber chose to trot around bareback today - grinning from ear to ear - it's fun to watch. You know the feeling.

So now we are back taking a little break before we go to the dreaded laundromat. It's another hot one today, but it is suppose to be the last day of the 90's for a bit. Yes, we chose not to have AC since MN usually only has maybe 4 or 5 really unbearably hot days - we live up on a hill, so if there is any breezes to catch, we are fine and AC isn't necessary. Jeff works in AC all day, so he likes coming home to "natural" air and I like it warm. It's just that earlier this week we had a heat index of near 100 and the humidity was about 94% - so that made it pretty hard to do anything.

Sorry to hear your internet isn't working well lately. Is it your provider?

What a pretty table with all kinds of fun, girly delights. I am like you, I have notes about everything, everywhere. I had to laugh about you're finding recipes that use a lot of eggs - that's how I am too when they are all laying (not right now, they have to get a bit older, but soon).

Have a good weekend my friend. Are you going to be heading to the lake now most every weekend? Are you spending the 4th there? We are trying to get together with the in-laws to go jet skiing, but schedules and weather just haven't cooperated yet.

What beautiful pictures!! You have become quite the photographer. I know...I still haven't posted any more pics. I am just checking in quickly, but I couldn't resist posting a comment. The Family Cow book is GREAT. It was my first book to read/study before we began to look for a cow. After you get a cow...I'll give you a couple more titles that will help you take care of your cow. I nearly fell over laughing at the pics of your son and his friend in the paint masks!!! We have never had any trouble, but we clean out our chicken coop weekly. SOMEDAY...I will try to get a picture posted of our 'chicken coop from heaven'...my term. The children have declared they hope there aren't any chicken coops in heaven. LOL. I so enjoyed talking with you and hope you are better now. Thank you so much for posting about the sabbath...it is such a sweet reminder. I have to go back up to the house...

Welcome to our ranch! Come, sit on our porch, have some tea, and stay a while. Were going to have a lot of fun chatting. Bring the kids, too, as we've got lots of room to play, horses to ride, cats and kitties to cuddle, gentle dogs to pet, and baby chickens to look at and hold. We can take trail rides around the alfalfa field, wade through the creek, take a paddle boat to the island on the lake, go fishing, or explore the Black Walnut Forest. There's no hurry around here. We'll just meander about and maybe even pack a picnic basket - Ranch Shekinah is abounding with Mulberry trees, wild blackberries and raspberries, an orchard of apple trees, and a herb garden.
