Got Freezer Meal Recipes?
Hi, all.
Have been too busy to keep up the blog, the past few months, and am sorry about that. Every time I sit down to sign on, some interruption comes along! But my intentions are the best... (yes, I know the old saw about good intentions...)
I have a friend who's going into the hospital for major surgery in a couple weeks. I'd like to put together some freezer meals, to drop off at her house, as a blessing. I haven't done much cooking for the freezer.
Do you have a favorite recipe or two, for make-ahead meals, to share? And what do you do about accompaniments, to round out a meal?

I am still posting it because it is a great one and I am sure your family and friends will love it.
It freezes well too. It is :
Mexican Lasagna
9x13 pan -spray the bottom lightly with Pam
In fry pan-
brown 1 lb of ground meat (turkey, chicken or beef)
add
1/2 cup of chopped onions and drain grease when done.
Add-
1 15 oz can of refried beans
1 8 oz can of tomato sauce
1 4 oz can chopped (mild) green chilies
1 pkg of taco seasoning
1/2 cup or so of water to thin out (I like it a bit thinner so I add a tad more)
simmer until seasonings are blended in nicely
6-8 tortillas (large size or the bigger md size works nicely)
2 cups of shredded cheese (cheddar or Mexican mix)
Layer 1/2 the tortillas on bottom, tear to fit.
Cover with 1/2 of the meat mix and then 1/2 cheese.
For added flavor you may add a thin layer of your favorite salsa on top of the meat, then add the cheese in the first layer.
Can wrap and freeze at this point or bake/eat
350 degrees for 40-50 min. or until heated thru and cheese is bubbly.
Top with your favs: sour cream, chopped onions, taco sauce, salsa
Goes well with Mexican rice or a nice green salad
This is a family favorite!
