Jul. 24, 2006 - Oatmeal muffins

I remember my mom telling me how her Mamaw would let her feed the leftover oatmeal to the redbirds. Unfortunately, we don't have redbirds in this part of the country, but I do have several hungry little mouths to feed. This recipe does the trick! They are one of my kids' favorite breakfast foods and a great way to use up leftover oatmeal.

Oatmeal Muffins

1 cup flour

1 cup brown sugar

1 t. baking powder

1 t. baking soda

1/2 t. cinnamon

Whisk together in a bowl.

1/2 cup oil

2 eggs

1 cup leftover oatmeal

1 t. vanilla

1/2 cup raisins or nuts (optional)

Combine ingredients; fill muffin tins 2/3 full; bake at 350 for 18 minutes.

I've never even CONSIDERED using leftover oatmeal. Now, my husband would flip with excitement if my frugality went to this level. I just might have to impress my hubby this week!

I just wanted to let you know that we tried the oatmeal muffins and they were a big hit with the family! I substituted Sucanat w/honey for the brown sugar and the guys said it was great (I did not try them-still diabetic). They made the house smell great too! Thanks for sharing this recipe, we will be making good use of it!

I'm going to have to try this one. I usually don't make oatmeal until the fall, but I might have to break that habit. ;-) The muffins sound yummy.
