I have a batch of these simmering on the stove, so I thought I would share the recipe. They smell so incredible I can hardly stand to wait! We are using them for meatball sandwiches tonight, but I also use them with pasta for a great spaghetti and meatball dinner. Even my pickiest eaters love these.
1 onion chopped fine
3 garlic cloves chopped fine
Saute in a bit of olive oil for about four minutes.
3/4 lb. ground beef
2 eggs
1/2 cup parmesan
1 t. salt
1 t. pepper
1/2 t. red pepper flakes
1 t. oregano
2/3 cup bread crumbs
Mix all together with onions and garlic. Shape into small balls.
There are two different methods to cook the meatballs. I prefer the second...it really infuses the meatballs with an incredible flavor.
1. Bake on a cookie sheet at 350 for 25-30 minutes.
2. Simmer meatballs in beef bullion and red wine until done.
Once they are done cooking, drop them into spaghetti sauce and simmer slowly to allow the meatballs to absorb the sauce.
I was just sitting here thinking what to make for dinner with the hunk of ground meat in the fridge. I think I'll give this a try.

Your meatballs sound find but your family is incredible! I am watching the "slide show" and saying -- this is from studio casting -- perfect kids -- dressed beautifully--no grime- spills-sweat-stains.... so where to do you keep the real ones - kids that is?

In response to your snack requests...we tried a new one today that my littles loved. It's not the healthiest thing in the world, but it tasted really good. :-) They were called Cheerio bars, made from honey, p.b., peanuts, sugar and of course cheerios.
I did a 'cracked pot' post today and it made me think of you, not that you are a cracked pot, but you used to be the cracked pot blog.....gosh....I think I'll stop now.

These sound yummy. I have printed out the recipe because I have been slack and have been buying meatballs. The good ones are SO EXPENSIVE...it's ridiculous.

About the lights and our energy saving changes. We do use dimmers on every light switch...and that has helped. My DH likes to leave lights on in a lot of the rooms all the time, so he can see when he first goes in, so he agreed that a night light would work. Now, he turns lights off when he leaves a room, but it is still dimly illuminated. It was a good compromise. Just having lights on in the rooms we are in and having those lights on dimmers has helped alot.
